Hi friends! I hope you are all taking care of yourselves and staying healthy. As you know I’ve been doing the Paleo diet for over 5 years now and while it is hard I’ve managed to be pretty diligent about it. The only food in that time that I really really miss is pizza. I’m pretty sure up to this point I’ve tried to recreate over 50 different Paleo versions. And they’ve all tanked. So sad! But then I tried the Mini Pizza Bites recipe and realized that I’ve been going about this all wrong. Rather than trying to recreate the pizza as I use to know it, all I really needed to do was imitate the taste. And the Mini Pizza Bites did that for me. They were delicious and healthy too.
This recipe will definitely be on constant rotation around here. They look a little strange but the reason they are yellow is from the nutritional yeast that’s added to give them a cheesy flavor. And dipping these into the pizza sauce just kicked it up a notch! You’ll find the recipe link down below.

Friday: Pizza Party Friday Night with bread machine pizza dough and for me Mini Pizza Bites
Saturday: Hawaiian Chicken Wings
Sunday: YOYO (you’re on your own!)
