Hi friends! You know this whole self-isolating thing would be so much easier if it wasn’t still snowing outside. And no I’m not kidding. In fact I still have about four feet on my front lawn. Sheesh, enough snow already. Needless to say I was a wee bit grumpy yesterday. My poor family. I hope you are living somewhere warm and sunny. I see on Instagram so many people gardening already. Wow that is so hard to believe!
Recipe Highlight:
We’ve been doing a lot of baking over here to help pass the time. This Paleo Coconut Oil Banana Bread is so good! It’s not dry at all which I find is often the case with banana bread. I sliced it all up and kept it in the fridge for an afternoon snack. Yum!
Happy Organized Life Bundle:
Also just a heads up that today is the last day to grab the Happy Organized Life bundle on sale. Tomorrow the price goes way up so today is the best day to get it. My video session in the bundle is all about menu planning and I had a great time talking about something I’m so passionate about. Plus there are many other organizing video sessions by other organizing experts in the industry that I think you’ll really like. This is a good one y’all.
Here’s what we’ll be eating for dinner this week. Happy Easter to you and your family!
My Weekly Menu Plan:
Monday: Ground Beef Taco Salad with some easy homemade salsa
Tuesday: Healthy Maple Mustard Chicken
Wednesday: Slow Cooker Savory Pot Roast with Gravy
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza
Saturday: YOYO (you’re on your own)
Sunday: Easter Dinner: Slow Cooker Ham served with Creamy Dairy-Free Mashed Potatoes and Oven Roasted Carrots. For dessert: Vegan Fudge

We live along the coast of Lake Michigan in Wisconsin. In fact our town sticks out 7 miles into the lake. While the rest of the state is warming, we are “cooler near the lake:. It’s announced on every weather forecast: Green Bay will be close to 60 degrees, but it will be cooler near the lake. It’s frustrating during an extremely frustrating time.

I hear ya Aleda, hang in there.

We lived in Alaska for 22 yrs. so I know what you mean about getting tired of all the snow!!
We moved back to Central Texas so it’s warm & green here already.
