Wow what a week it’s been. I don’t even know what to say about it. Schools here in Alberta, Canada just announced last night that schools would be closing starting today. And from what I’ve read they may not open again until fall. Yikes! I’m on day 4 of not leaving my house. I have an autoimmune disease so I have to be very careful. We are pretty well stocked in the food department so that’s good. However I expect I may have to make substitutions as necessary if I don’t have an exact ingredient on hand. How are you feeling about everything? Do you have enough supplies? Are your kids off school? Please keep yourselves safe everyone.

Paleo Pumpkin Banana Muffins:
I’m going to try upping my baking game to give me some more lunch options. Yesterday I made these delicious Paleo Pumpkin Banana Muffins. They were really moist and flavorful. Yay for a recipe turning out!

Monday: Juicy Oven Baked Chicken Breast served with potatoes and carrots
Tuesday: Spinach Salad with Bacon and Eggs
Wednesday: Slow Cooker Cheeseburger Potato Soup
Thursday: Leftover buffet
Saturday: Sausage and Potato Skillet
Sunday: YOYO (you’re on your own!)
