Hi friends! Did you all have a great week? It is a long weekend for us here in Canada and we have today off for Family Day. And the best part is my family has absolutely no plans. I’d really like to just read my book on the couch all day. Who else thinks this sounds heavenly? Some might find it boring but I can’t wait. My hubby made a big chicken dinner last night and then made broth with the bones so we could have an easy chicken soup dinner tonight. So I don’t even have to really think about cooking either. Sweet!
My husband left me alone in a bookstore last week and this is what I came home with. Well this and maybe a few other things but he should know better than to leave me unsupervised in a book store, ha!
Anyway The Big 15 Paleo Cookbook (affiliate link) is a great book with easy recipes with minimal ingredients which I am all about. Can’t wait to dive into it. And for those that are interested, it’s on for a great price on Amazon right now. I’ll let you know what I think of the recipes as I make them.
Here’s what I’ll be making for dinner this week.
My Weekly Menu Plan:
Monday: Paleo Chicken Soup using homemade broth (that my husband made after cooking up a large farm fresh chicken yesterday, yum!)
Tuesday: Slow Cooker Bolognese Sauce served over spaghetti squash noodles
Wednesday: Slow Cooker Mongolian Beef served over mashed potatoes
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Salmon and Lemon Herb Cauliflower Rice
Saturday: Dinner out!
Sunday: Church potluck: Spinach Bacon and Mushroom Crustless Quiche and Paleo Vegan Shortbread Lemonades
