Hi friends! Happy Monday to you and you and you. Sunday nights are when I sit down to type up my weekly menu. It’s the same steps every week. I prop myself up on my bed with my armchair pillow and cozy up under my electric throw. Then I top that with my lap desk and laptop. I turn on a Hallmark movie and then and only then am I finally ready to figure out what in the world we’ll be eating this week. It’s a whole process y’all.
Recipe Highlight:
Last week’s recipe highlight definitely goes to the Slow Cooker Honey-Garlic Baby Back Ribs. However I totally cheated because that’s what I do. When recipes are too fussy I take shortcuts. Which might explain why many of my recipes don’t turn out, ha! But in this case, I cooked the ribs in the slow cooker as called for but skipped the whole cooking them in the oven afterwards part. I just couldn’t be bothered and they were still delicious. So there :). I don’t even have a picture to share with you because I gobbled them down so fast. Yum!
Does anyone else skip steps in recipes or is it just me?
Here’s what I’ve come up with to eat this week. A couple of bonus recipes I’ll be making based on cravings include Paleo Waffles for breakfast and Paleo Onion Rings.
Here’s hoping it’s all delicious!

My Weekly Menu Plan:
Monday: Lemon Garlic Butter Chicken and Green Bean Skillet
Tuesday: Dijon Rosemary Pork Chops served with rice and broccoli
Wednesday: Bunless Burgers served with raw veggies
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Almond Flour Pizza Crust
Saturday: Fish Taco Bowls with Mango Salsa
Sunday: YOYO (you’re on your own!)
