Welcome to Menu Plan Monday!
Hey there! Happy Monday once again. We were so busy this past weekend doing a room switcheroo. My youngest son took over his big brother’s much bigger bedroom in the basement. His big brother has grown and flown the nest so the time had come. It was a really big job but I loved every minute of all the organizing I got to do.
Dinners has gotten a little easier now that we are back down to three of us at home. I’m planning on using my slow cooker two times this week and that makes me so happy. I love being able to prep dinner in the morning when I have more energy. It’s a little gift I give to myself. On the menu this week I’m putting our very favorite slow cooker beef stew. I have to adapt it a little bit to make it Paleo but it’s absolutely delicious both ways!. Seriously so easy to throw together especially since I use whole canned potatoes to reduce prep time. Give it a try!
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Easy Baked Honey Mustard Chicken served with Oven Roasted Potatoes
Tuesday: Slow Cooker Beef Stew (family favorite)
Wednesday: Slow Cooker Ham and Potato Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Lemon Garlic Salmon
Saturday: Beef and Broccoli Stir-fry
Sunday: YOYO (you’re on your own!)
