Welcome to Menu Plan Monday!
Hey there, happy Monday to you. I hope you had a great weekend. Saturday was an incredibly beautiful fall day here. Oh my was it ever something special. Glorious and golden and oh so warm. I just couldn’t stop taking pictures of all the beauty. I tried to soak it all up as much as I could.
This past weekend I tried making a new Paleo pizza crust recipe. It didn’t look too bad but the crust was dry and tasteless. I won’t even bother linking the recipe. The cheese I used is a dairy free one I get from Walmart. As you can see it doesn’t melt too well. Pizza is the only thing I miss on the Paleo diet and I just can’t find any close substitute.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Simple Salt and Pepper Chicken Wings served with tossed salad
Tuesday: Healthy Slow Cooker Pulled Pork
Wednesday: Cilantro Turkey Burgers
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Zucchini Pasta with Lemon Garlic Shrimp
Saturday: Grilled Peach & Steak Salad
Sunday: Church Potluck: I’ll be bringing Easy Tomato Soup with Bacon (in the slow cooker) with my favorite Paleo Lemon Cookies

I haven’t tried much in the way of paleo “breads”, but I did do the keto diet for awhile and they had a keto pizza recipe. The crust was basically eggs and shredded cheese. I was skeptical, but it actually hit the spot despite the fact that it was not bread in any way, shape or form. It was from the diet doctor website. Can you do eggs and DF cheese?

Yes I can do eggs but not all DF cheese depending on ingredients. Most of the Daiya cheeses for instance don’t work for me.
