Welcome to Menu Plan Monday!
Happy Monday friends! Who’s ready for a brand new week? It’s time to get our menus planned for an organized and less stressed week. Notice I didn’t say stress free, ha!
Recipe Highlight:
Now that my son is home from college I’ve been searching for some new allergy friendly recipes to try for him. He’s allergic to dairy, gluten, eggs, fish and nuts. I wanted to make some muffins that he could have for a quick lunch or snack. So yesterday I made these Gluten Free Vegan Sunshine Citrus Muffins and he loved them. Yay, win for mom! I used the Bob’s Red Mill 1 to 1 Baking Flour Blend and my son said the muffins were really delicious. They certainly smelled good! I loved that these actually turned out for me (you all know my track record) so I’ll definitely be trying more of Sarah’s recipes. Sarah’s photography skills are so much better than mine so be sure to go check her out.

Monday: Slow Cooker Meatball Zoodle Soup
Tuesday: Whole 30 Taco Salad with Quick Homemade Blender Salsa
Wednesday: Honey Garlic Baked Chicken Thighs served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Scrambled Eggs with Smoked Salmon
Saturday: Chicken Cobb Salad
Sunday: YOYO (you’re on your own!)
