Welcome to Menu Plan Monday!
Hey everyone, happy Monday! I hope you are ready to get your menu plan done today. Menu planning isn’t just something you do to make life more complicated. It in fact simplifies the entire dinner process start to finish. Living with an autoimmune disease and low energy levels (please read that post if you haven’t yet) means I need to simplify life as much as possible. Menu planning is actually one of the biggest ways I do that.
So if you haven’t given menu planning a chance, I urge you to go ahead and try it.
Recipe Highlight:
Last week’s recipe highlight goes to the Slow Cooker Meatball Zoodle Soup. So easy to throw together in the morning (when I have more energy) and it was yummy. Using my spiralizer with the zucchini took a little more time but I made up for it by using pre-made frozen meatballs. It makes a big batch too.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Skinny BLT Avocado Wraps
Tuesday: Slow Cooker Paleo Roast Beef with potatoes and carrots
Wednesday: Hawaiian Grilled Chicken Lettuce Wraps
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza Crust
Saturday: Sausage Hash Brown Egg Bake
Sunday: YOYO (you’re on your own!)
