Welcome to Menu Plan Monday!
Hi friends! Happy Monday to you. It’s time to get those menu plans done for the week. A menu plan just makes everything better and easier. I’m so stumped why more people don’t give it a try. I hate cooking and menu planning makes getting dinner on the table each night so much more tolerable. Seriously. Please give it a try it if you haven’t already.
Last week was spring break for my youngest here. We enjoyed some pretty good weather for most of the week. However sadly the weather took a turn this past weekend. Saturday we woke up to snow:
Isn’t that delightful? Ummm no, no it is not. Thankfully I don’t think it’s going to stick around but it was enough to wreck some of our plans. The roads were a pretty big mess with lots of accidents so we just stayed home instead.
Now that my middle son is home from college for the summer, my menu plan might start looking a little different. He is very allergic to dairy, gluten, eggs, fish and nuts. So while him and I do eat similarly he can do sugar and grains while I can’t. So you may see some allergy friendly recipes every once and awhile. I’ll just make Paleo substitutions for myself as I go along. Dinner time gets a little tricky for me now for the next four months but thankfully a menu plan makes it so much easier.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: 10 Minute Black Bean and Corn Quesadillas (I’ll make 5-Minute Cassava Flour Tortillas for myself)
Tuesday: Easy Bunless Burgers with Cilantro Dill Mayo Sauce
Wednesday: Slow Cooker 5-Ingredient Pork Roast served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza Crust
Saturday: Strawberry Basil Chicken with Avocado
Sunday: YOYO (you’re on your own!)

I so agree – not a cooking fan here either, but a menu plan makes it feel a little more doable. Sometimes deciding what to make is more than half the battle!
