Hi friends! How are you all doing today? I just couldn’t wait to tell you all about my recipe highlight from last week. This Slow Cooker Mongolian Beef was amazing! It was also super quick to throw together which makes me so happy. My entire family loved it. I forgot to take a picture so thankfully Sara doesn’t mind me sharing one of hers. Seriously this was so good! To make it Paleo I switched out a few ingredients. I used arrowroot starch instead of cornstarch, coconut aminos instead of soy sauce and coconut sugar instead of brown sugar. Yummy! You’ve got to try it!

I’ve got some more easy meals on my menu this week. Getting dinner on the table just doesn’t need to be complicated or stressful. I love menu planning for the relief it gives me.
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Dill Pickle Wings served with tossed salad
Tuesday: Easy Low Carb Bunless Burgers
Wednesday: Crazy Slow Cooker Pork Chops served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Dijon Baked Salmon
Saturday: Sheet Pan Roasted Sausage with Potatoes and Peppers
Sunday: YOYO (you’re on your own!)

SOLD! I’m going to have to try that Mongolian Beef. Someone gave me a recipe once for Korean Beef that looks very similar and is just as yummy – all of us love it!
(I don’t know if you saw on my stories and feed – i’ve been looking for recipes – I’m so bored with the same old, same old!)
