Welcome to Menu Plan Monday!
Hi everyone! Happy September to you 🙂 I hope you are all enjoying the long weekend. Mine wasn’t so happy because we took my middle son back to college. Yes I’m happy for him but sad for me at the same time. I loved having him home for the past four months. What a gift it was to me. He always knows how to make me laugh and he’s always up for being silly with me. The good news though is that this drop off was not nearly as hard for me as last year’s was. What a relief!
For those that don’t know, my middle son has severe food allergies and it was a major transition for me because of this. Drop off was still emotional this time however I wasn’t quite as panicked about the whole thing. On our drive back from dropping my son off I couldn’t help but notice how much the leaves are already changing colors here. Plus it’s so cold out. But with cold weather, comes soup, yay! I’m definitely excited about adding more soups to my menu plan. How about you? The recipe I found for our Saturday meal sounds sooooo good and comforting! This week my youngest (12) also goes back to school so comforting dishes are a must 🙂
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Paleo Chicken Parmesan served with rice and broccoli
Tuesday: Dairy-free Spaghetti Squash Chicken Alfredo (using leftover chicken) – a family favorite!
Wednesday: Paleo Slow Cooker Beef Stew
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Salmon Caesar Salad (no cheese)
Saturday: Creamy Potato and Ham Soup
Sunday: YOYO (you’re on your own!)

That ham soup recipe does sound great! I need to use up some ham hocks so we might try that out – thanks for the link!
