Welcome to Menu Plan Monday!
Hi friends! Happy Monday to you all. Ready for a brand new organized week? All it takes is getting a few (easy) recipes picked out ready to go for the week. That way when it comes time to make dinner each night you don’t have to stand there staring into the cupboards trying to come up with something on the fly.
I sat down with my youngest yesterday (he’s 12) and we have decided to do something a little differently with our menu planning from now on. He’s always been really good about helping me in the kitchen but now it’s time for him to start making meals himself from start to finish. So he’s going to be in charge of dinner once a week for him and his Dad. I’ll still be making a Paleo recipe for myself but I’ll probably make mine earlier in the day when I have more energy.
He went through this cookbook below (affiliate link) and I wasn’t surprised when he picked the Stovetop Mac & Cheese. A great recipe to start with! He’s still trying to figure out what veggie to make with it though. I think he’s hoping I’ll forget that part.

Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Roasted Butternut Squash Soup
Tuesday: Stovetop Mac & Cheese & for me Garlic Shrimp Asparagus Skillet
Wednesday: Easy Baked Honey Garlic Chicken (using coconut aminos instead of soy sauce) served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza
Saturday: One-Skillet Pork Chops with Apples
Sunday: YOYO (you’re on your own!)

I love when kids get in the kitchen too! My boys help out a lot and its always a good time. A little messier but memories are worth a little mess!

So worth it! My oldest (who is now 21) cooked the majority of our meals when she was a teenager. Training pays off!
