Welcome to Menu Plan Monday!
Hi friends! I hope you had a wonderfully full yet relaxing weekend. Yesterday was a beautiful day here so we took advantage of it and went out on a bike ride down to the river. Such a gorgeous and peaceful place!
Lately I’ve been thinking about menu planning and all the reasons people don’t do it. Over the years I’ve tried to counter those reasons here with opposing arguments about the benefits of menu planning. But the more I thought about why I do it, the more I realized why menu planning is such a necessity for me.
Menu planning is a present I give to my tired future self.
You see I don’t ever feel like menu planning or cooking. I am not someone that enjoys being in the kitchen but we do need to eat. So knowing in advance what needs to be prepped and cooked each day makes all the difference to my peace of mind and sanity. Every day I am so very grateful that I took the time to pick out easy, simple and healthy recipes to make for my family. Whew!
Here’s what we’ll be eating this week. Getting out the slow cooker again!
My Weekly Menu Plan:
Monday: Baked sausages with spinach salad
Tuesday: Slow Cooker Roast Beef with Potatoes & Veggies
Wednesday: Slow Cooker Garlic-Orange Pork Tenderloin served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza Crust
Saturday: Garlic, Lemon and Herb Grilled Chicken served with baked potatoes and corn on the cob
Sunday: Church picnic – Sesame Chicken Chopped Salad and Fudgy Paleo Brownies
