Welcome to Menu Plan Monday!
Hey y’all. Happy get organized for the week day. My boy went back to college on Saturday. It was so nice to have him home to hang out with for the week. He always keeps me laughing that boy. He’ll be home again for the summer in two months.
Well it’s happened again. Seriously so many recipes, so many failures. Yesterday we had a potluck at church so I decided to make some Paleo “Cornbread” Muffins. I got an advance copy of the recipe from the Pure & Simple Nourishment newsletter that I subscribe to. Erin says she’ll have the recipe up on her blog later this week. The recipe calls for the muffins to be baked for 26-28 minutes so I put them in for 26 minutes and walked away. This is what happened. Burnt muffins. Oops.
It’s totally my fault because I wasn’t watching it. Also the recipe suggests using silicone muffin cups which I don’t have so I just used a regular muffin tin that I greased. I had some trouble getting them out of the pan and they were really dry. So I made them again. This time I used some foil muffin cup liners instead and only cooked them for 23 minutes. What a difference! They were really delicious the second time around. I will definitely make them again sometime, hopefully without burning them!
I was joking around with my husband that I need to start a second blog just for all my recipe disasters. Something tells me Pinterest wouldn’t love those types of pictures though, ha! Can any of you relate with me?

My Daily Must Do Morning Cleaning Task
Here’s what we’ll be eating this week. It’s always a good week when I know I’ll be making some homemade salsa, yummy!
My Weekly Menu Plan:
Monday: All Meat and Veggie Paleo Chili (family favorite)
Tuesday: Sheet Pan Lemon Rosemary Chicken & Potatoes
Wednesday: Lettuce Wrap Tacos (the boys will have regular taco shells) with Homemade 10 Minute Blender Salsa
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza Crust
Saturday: Slow Cooker Roasted Garlic Butternut Squash Soup (using coconut milk instead of cream)
Sunday: YOYO (you’re on your own!)

I find what others eat very interesting and appreciate this Monday column.
We are just two and limited by an assortment of medical conditions on what we can eat – plus I am a picky eater.
We generally eat out (cheap) on weekends – Ikea cafe twice a weekend?Friday and a (varying) Asian buffet one day of same. Mondays we normally have either chicken patty with homemade tomato gravy and a small serving of pasta or Ikea meatballs with same. Tuesday is normally sausage sandwich – when we have them we use sausages from the PA Dutch country, otherwise turkey sausage. Wednesday is the day we stare at each other and husband picks something. Thursday we have chopped turkey burgers.
