Hi friends, are you ready for an organized week by writing up a menu plan? It’s that time again! It’s been a crazy couple of weeks around here that is for sure but sadly my company has all gone home now. In fact my parents even took my youngest son home with them for the month of July (he’ll fly back with my sister in three weeks) so my house is really feeling quiet after all the hustle and bustle. I took a much needed two hour nap yesterday after church and it felt glorious 🙂
Recipe Highlight:
After my nap yesterday I decided a treat for me was in order and since I had very ripe bananas to use up I decided to make these Paleo Cinnamon Bun Banana Muffins. Oh my were these ever good. Absolutely delicious and they so hit the spot. They are made with honey rather than refined sugar. Highly recommend!
Summer Menu Planning:
With the heat and fun of summer I find menu planning is especially helpful for making sure dinner gets on the table quick and easy without heating up the house any more than necessary. I would love to know if you find it harder or easier to menu plan in the summer? Do you use your slow cooker more in the summer to avoid turning on the oven? Tuesday: Chili Lime Pork Spare Ribs served with Healthy Oil Free Baked Curly Fries
Wednesday: Paleo Pizza Chicken
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Avocado Egg Salad
Saturday: Slow Cooker Apple Rosemary Pork Roast served with rice and broccoli
Sunday: YOYO (you’re on your own!)

I find both cooking and meal planning much easier in the summer, because I grill a lot. Almost anything can be grilled, it requires little planning and few ingredients, and clean-up is minimal. Mine kind of cooking!
