Hi friends, welcome to another organized menu plan week. I’ve got two slow cooker recipes on the menu this week to make life a little bit easier. I love getting dinner ready in the morning when I have more energy. I haven’t been feeling well lately so I need all the help I can get with dinner. Anyone else using their slow cooker this week?
Recipe Highlights:
Speaking of slow cookers, I totally forgot to tell you about two slow cooker recipes I tried at Christmas that were amazing. The first was a Slow Cooker Stuffing recipe that cooked up beautifully without drying out (like others I’ve tried) and while I couldn’t eat it myself (not Paleo), I was told it was most excellent.
The next was the Dairy-Free Slow Cooker Mashed Potatoes. This recipe was unique in that you actually cook the potatoes in the slow cooker rather than just use the slow cooker to keep them warm. The recipe wasn’t accurate for us in terms of cooking time, it actually took more like three hours to cook the potatoes, but once they were cooked we just mashed them up in the slow cooker and left them there on warm while we waited on the rest of the meal to be done. Everyone loved them! I’ll definitely make them this way again throughout the year.

Monday: Salt & Pepper Chicken Wings served with delicious green smoothies
Tuesday: Slow Cooker Honey-Garlic Baby Back Ribs served with broccoli
Wednesday: Slow Cooker Beef & Winter Vegetable Stew
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me BLT Avocado Lettuce Wraps
Saturday: Moroccan Chicken Burgers with Special Sauce
Sunday: YOYO (you’re on your own!)

When I was working and the kids were still at home, I would plan so I didn’t have to rush when I got home and the kids were yelling, “Where’s my supper OR What’s for dinner??”
The crockpot was my best helper! Cooking the mashed in the crockpot sounds great and easy to me.
