Hi everyone! It’s that time again to sit down with a pen and paper and maybe your favorite cookbooks or Pinterest and plan your menu plan for the week. It’s definitely well worth the investment in time that is for sure!
This week my middle son (16) had some minor foot surgery and now has to be off his foot for awhile to recuperate. He’s typically a huge help to me in the kitchen (especially with all his food allergies!) so to be without his help means way more work for me in the kitchen. Thankfully I can take that into consideration with my menu planning and keep it super simple!
We’ll definitely be using up some fresh stolen produce this week. Just kidding, we didn’t really steal it. We are watching my friend’s home right now while she’s away and she has a pretty nice garden we can help ourselves to, sweet!
Next week is back to school around here and I’m so sad. Where did the summer go?
Here’s what we’ll be eating this week. How about you?
My Weekly Menu Plan:
Monday: Crispy Skillet Hashbrowns (using coconut oil not butter) served with eggs or sausages and raw carrots
Tuesday: Honey Lemon Vinaigrette on Peach Cucumber Bacon Salad
Wednesday: Maple Glazed Garlic Chicken served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Foil Baked Salmon
Saturday: Lemon Basil Grilled Pork Chops with grilled veggies
Sunday: YOYO (you’re on your own!)

Those are some good-looking carrots! We tried to grow carrots last year and ended up with a single, very scrawny one.

Hey Laura! I was just on your site yesterday reading about your diet update. I’ve been eating Paleo for almost two years now as a result of being diagnosed with Rheumatoid Arthritis. I’ve now successfully been able to come off all meds, yay!! So glad you are also having success with your diet as well. So great to hear!!
