Hi everyone, welcome to another Menu Plan Monday! How are you this week? As you know I celebrated my birthday last Friday with a really fun Polka Dot party. I hope to have some pictures of the decor up this week for you to check out. I was really happy with how everything turned out.
Unfortunately I can’t say the same thing about my Paleo birthday cupcakes. Y’all it took me THREE tries of the same recipe to get some presentable cupcakes!! What in the world? I used this recipe for Paleo Blueberry Lemon Cupcakes and the only reason I kept trying was because even though my first and second batch bombed in appearance, they tasted amazing!
The problem with the first batch was they were just really soggy and flat and stuck big time to the cupcake wrappers I used. So the second time I made them I went without cupcake wrappers and just used coconut oil to grease the cupcake pan and cooked them a bit longer. Unfortunately they still stuck to the pan and got a little ugly as I tried to get them out. Sheesh!
Round three, I went back to cupcake liners but this time used the double lined ones and baked them for 26 minutes. Success! By this time though I was so exhausted there was no way I was even going to attempt the frosting. Thankfully they were delicious without it 🙂 Even my friends that aren’t Paleo eaters really liked them, in fact these cupcakes were more of a hit than the fancy expensive (non-paleo) cupcakes I bought for everyone from my local bakery.
Another recipe that was a hit with everyone also happened to be another Paleo recipe. I wasn’t super surprised by that though because these Paleo Twix Bars from Bakerita were soooo yummy!
Unfortunately I couldn’t leave them sitting out on my counter because they got too soft and are much better cold so I had to leave them in the fridge. That didn’t stop them from disappearing though 🙂
My Weekly Menu Plan:
Monday: Salt and Vinegar Chicken Wings served with spinach salad
Tuesday: Paleo Breakfast Sausages served with homemade fries and raw veggies
Wednesday: Turkey Taco Lettuce Wraps
Thursday: Leftover buffet
Friday: Happy Canada Day!!! Pizza Party Friday Night! and for me Coconut Shrimp
Saturday: Buffalo Chicken Zucchini Boats
Sunday: YOYO (you’re on your own!)

Happy Birthday! A trick I learned was to spray your paper liners with non stick cooking spray. They will release anything that way!
