Hey friends, happy Monday to you! I hope you all had a nice Mother’s Day yesterday. I had a nice relaxing day here that started off with a delicious breakfast in bed from my youngest. Then my oldest son, who knows the way to his mamas heart, gave me this:
Isn’t that hilarious…a box of potato chips…such a sweet boy! I don’t think potatoes are technically Paleo but I was able to re-introduce them last year without any problems, and plain chips are a nice treat for me once and awhile. Would this excite anyone else?
Speaking of Paleo, last week was an exciting one for me because I finally got up the nerve to make Paleo mayo and it turned out, whoot! I had fried fish on the menu last week and was able to serve it with creamy coleslaw, so yummy! I’ve had it on the menu quite a few times in the past but always chickened out making it because I was so intimidated by it, convinced it wouldn’t turn out. It actually wasn’t hard at all, I used my Vitamix on the lowest speed and ever so slowly poured in the oil to the egg mixture. It’s opened up so many new delicious recipes for me.

My Weekly Menu Plan:
Monday: Turkey, Bacon and Guacamole Panini (mine will be in salad form)
Tuesday: Slow Cooker Company Pot Roast with potatoes and carrots
Wednesday: Lemon Rosemary Chicken with Bacon & Garlic Cabbage
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Paleo Pizza Crust
Saturday: Steak Salad with Creamy Garlic Vinaigrette
Sunday: YOYO (you’re on your own!)
