Hi everyone! So as you know I like trying new recipes out despite the fact that I’m a terrible cook and hate being in the kitchen. So why would I do that to myself? I like trying new foods and knowing I’m preparing something new actually makes it exciting for me to be in the kitchen. Plus I have discovered the art of finding quick and easy recipes to try out, for the most part anyway, so it’s not like I’m working hours in the kitchen. If you have never read my recipe criteria you can find it HERE. The downfall of course it that some recipes work out and some don’t….you win some, you lose some. For instance, last week I made a vegan cream sauce to put over spaghetti squash “noodles”. It required soaking some cashews and then blending them with diced tomatoes. Let’s just say it was not very enjoyable 🙂 BUT later in the week I made this recipe for Slow Cooker Ribs with Homemade BBQ Sauce and they were so good! My whole family really loved them! So you see it all works out in the end.

Gluten-Free Bread Making:
My 16 year old son has many food allergies including gluten, dairy, eggs, fish and nuts. We have been purchasing him a particular loaf of bread for years that is free of all these things. There are many gluten free breads on the market but the majority of them also include eggs. Unfortunately the bread we’ve been buying is getting harder and harder to find so we decided it was time to try making our own something we haven’t done since my son was a toddler. We have a Cuisinart Breadmaker (affiliate link) that has a gluten-free setting but without eggs it gets a little tricky.
Here’s our first attempt:

For our second attempt we used this recipe, using our homemade gluten free blend and subbing the eggs with egg replacer.
Turned out a little better (and didn’t taste too bad) but I think we’ll keep working on it. If anyone else has experience with something like this please let me know!
My Weekly Menu Plan:
Monday: Roasted Butternut Squash and Bacon Soup
Tuesday: Easy Baked Chicken Breasts served with rice and broccoli
Wednesday: Yummy Sloppy Joes
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Asparagus Salmon in Foil
Saturday: Chicken Apple Sausage served with homemade fries (without the parmesan cheese) and carrots
Sunday: YOYO (you’re on your own!)

I’m impressed that you do so much cooking and you don’t like being in the kitchen. I have a kid who is lactose intolerant and another with nut allergies. I can be hard to make a meal that everyone enjoys. Thanks for this opportunity to share our food.

I enjoy cooking, but most days I don’t seem to have the time or energy for it by suppertime! So I’ve been keeping it pretty simple myself.

This won’t help terribly with the bread machine dilemma, but I have this cookbook that all the recipes are gluten-free, dairy-free, egg-free and I LOVE the bread! It’s easy, step-by-step directions and its the best gluten-free bread I’ve ever eaten. I wish I was home more so I could make it everyday!! Title is ” The Allergy-Free Cook Bakes Bread” by Laurie Sadowski. You should check it out–it is seriously the best birthday present I’ve gotten in recent years 😀
