Hi everyone! How are you? It’s so hard to get back into the swing of things now that Christmas break is over and the kids are back in school. I’m not ready for it, I love having my kids home and just hanging out with them and being silly, not to mention the staying up late and the sweet sleeping in. Oh how I love sleeping in 🙂
I’m not sure if anyone remembers but before Christmas I said I would be sharing an old family recipe for Gum Drop Cake. And then I never posted it because well as is pretty common with me and baking, this happened while trying to get it out of the pan.
Oops! Not only didn’t it come out of the pan very well, but it also tasted a little bland. I think I need to work on it a little bit 🙂
One recipe that did turn out for me this past weekend though was this delicious recipe for Healthy Caramel Popcorn. Oh my goodness, was it ever good, I’m still thinking about it. With no refined sugars or butter it’s a nice yummy treat without all the unhealthy stuff.
Grocery Budget Makeover Course:

Wednesday: Hashbrown Casserole with Ham for a friend that just had a baby and ham, rice and broccoli for my family

Friday: Pizza Party Friday Night! and for me Rosemary & Garlic Roasted Salmon
Saturday: Garlicky Pork Chops
Sunday: YOYO (you’re on your own!)

Oh, my your gum drop cake looks like my banana bread has on occasion. It will stick and then come out in a couple of chunks. It still tastes delicious, though.

Was reading your post about the cake. I can totally relate. I had a potluck to take food for over the New Year’s week end with our cowboy shooting club. The theme was a tribute to the “Spaghetti Western” which was made in Italy so I got the brilliant idea to make an Italian Creme cake. Get it…for Italy. Anyway, the potluck his held outside on picnic tables so I wanted something easy to handle on paper plates easier than a layer cake. At first I was going to do cupcakes, but didn’t want to take that much time for the icing and stuff. Should have done the cupcakes. Then I had the bright idea to make a bundt cake. It came out so beautiful, until I had to turn it over and release the cake, only part of it came out. I had forgotten that this particular recipe is to dense to make a bundt cake. Anyway, not having time to make something different, I came up with using the broken cake pieces to make a trifle. OH MY, did those people go crazy for it. Was so happy that I was able to improvise and turn an disaster in to sweet enjoyment.
