Hello! Are you ready for a new week? This week I’ve got a few events I need to bake for and I’ve picked some adorable cupcakes to make as you’ll see below. Hopefully mine will turn out just as well, it’s always dicey when I’m in the kitchen! The worst part is I can’t taste them to make sure they are okay so I really am winging it. Wish me luck!
Recipe Highlight:
Last week I made such a delicious dinner. Oh my goodness were these Paleo Italian Chicken Fingers ever good! So yummy! You’ve got to give them a try 🙂 I liked this recipe so much I’m giving another on of their recipes a try this week.
Same Menu Every Week:
So last week I shared a post on our Menu Plan Monday Facebook page and it was interesting to read the differing comments. The topic was all about using the same menu plan week after week all summer long with 7 reasons why it’s a good idea. I definitely think it could make life so much easier especially during a difficult season of life however I’m not sure I could do it myself. I rarely make the same recipe twice because I just love trying new recipes so much but I wouldn’t be opposed to it if I needed to simplify life for a time. Would love to hear your thoughts, could you do it?
My Weekly Menu Plan:
Monday: Loaded Guacamole BLTs for the family, Crab Salad with Celery for me
Tuesday: Honey Glazed Prosciutto Chicken served with broccoli
Wednesday: Slow Cooker Sugar Free Homemade BBQ Pulled Pork
Thursday: Leftover buffet
Friday: Pizza Party Friday Night and for me Shrimp & Avocado Taco Salad
Saturday: Hosting a Single Mom’s Day Spa at church during the day, I’m bringing Cherry Limeade Cupcakes, tea biscuits and No Bake Cookie Bars (the best!). For dinner: Wowza Baked Chicken Drumsticks with spinach salad
Sunday: Potluck at church, I’m bringing these S’mores Cupcakes! For dinner everyone is on their own 🙂

Eating the same menu all summer reminds me of a post I read about a woman who wears the same basic outfit to work every day. It’s definitely easier, saves time and money and takes a lot of stress out of the day! I’m not sure I could do it, just because I enjoy eating and like to have variety – but it’s an interesting idea!

I think eating the same dinners week after week would be hard. But my SIL does this all year long. She has 7 dishes they eat over and over. She makes a few different ones here and there but they stick mainly with their 7 dishes.
I have about 100 recipes I like to make. Some more during the summer others during the winter, but I also love trying new recipes and when I find one we love it goes into my recipe book. Then I will make it again. My menu depends more on what’s on sale and what sounds good that week.

I don’t think I could eat the same 7 meals everyday. Maybe use the same meals over a month but like you I like to try new things. I saw a nutritionist this past week and have started the journey to find out if cutting out certain foods will help my RA. First, just cutting out sugar which is a challenge in itself, not do much because of sweets but the hidden sugar in things I wouldn’t expect like my fave edamame hummus, nitrate free turkey and capizza sauce. It’s going to be a rough ride.

Hi Tanya, I have RA as well and six months ago started the Autoimmune Paleo Diet. I HIGHLY recommend it. My pain is nearly gone and I am weening off the harsh meds I was put on. I don’t miss sugar in the slightest and will never go back to how I ate before because I just feel so much better. I hope you find this to be encouraging to you, you can do it!!!

I named mine “last week of unhealthy food” as my family is starting a clean eating journey to celebrate my husband and I’s 20th anniversary. We want to be around for many, many more so we have committed to lose 20lbs each over the next year together, and dragging the kids into a cleaner, perimeter of the store kind of eating. Next few months will be HARD! So thankful for your recipes and this linkup to help us out.
