Hey folks! Let’s get organized for the week shall we? All you have to do is select 5 quick and easy meals to make during the week, shop for the necessary ingredients and you’re ready to go. No reason to complicate menu planning any more than you have to. Keep it simple and get in and out of the kitchen fast!
You all know I’m not a huge fan of pumpkin but last week contributor Melanie shared a pumpkin recipe that sounds so different, I might just have to give it a try. It’s called Upside Down Pumpkin Pie. Let me know if you make it and what you think of it.
Recipe Highlight:
If you haven’t tried the No-Bake Peanut Butter Bars you really must. They were absolutely delicious. Sorry I forgot to take a picture but I am highly recommending them. I used gluten-free graham cracker crumbs and oh my I could have ate the entire platter of them up (thankfully I didn’t though!).

Monday: Black Bean, Corn and Cheese Quesadillas
Tuesday: Cheesy Butternut Squash Pasta Bake
Wednesday: My middle son’s 15th birthday! He is requesting Bacon-Wrapped Filet, homemade potato chips, and for dessert Gluten, Dairy and Egg Free Chocolate Cake!
Thursday: Leftover buffet
Friday: Dinner club returns – tonight is Greece night and I’m bringing Greek Style Oven Roasted Lemon Butter Parmesan Potatoes
Saturday: Bridal Shower at church, I’ll be bringing Candy Corn Cream Cups. And for dinner we’ll be having Cheddar Potato Chowder
Sunday: YOYO (you’re on your own)

My kids are so funny, all of them are so specific and soooo different in their likes too. My youngest has a birthday in November and he is already weighing his choices lol.
