Hey lovely Menu Plan Monday gals and guys. Hope you all had a fantastic weekend and are ready to get this next week off to an organized start. Best way to do that is by planning a menu out. Remember it doesn’t have to be complicated. Select five EASY recipes for the week, shop for the groceries and away you go. I’m super convinced that the secret to successful menu planning is in the recipe selection. Here’s my own personal recipe selection criteria in case you’ve never seen it before.
So as you know I’m a Canadian girl and last Tuesday we celebrated Canada Day. I told you I was going to make some Maple Bacon Cupcakes. Well they flopped. My daughter told me they tasted like bran muffins which isn’t a bad thing unless you are expecting a sweet cupcake instead. I had tried subbing in a gluten free flour blend for the flour called for so I’m not sure if that was it or not. My daughter decided to save the day and just make regular vanilla cupcakes instead and we still decorated them with maple frosting (using maple extract instead of vanilla). Here’s how they turned out. Cute right? I couldn’t eat them but quite honestly I’m not a sweets girl and didn’t need the calories so I was okay with that.
I made the Maple Bacon Biscuits next and didn’t even try to make them gluten-free after the cupcake fail but from what everyone else said they were very tasty. Perfect for a picnic.
Also we had my regular dinner club last week. My girlfriend chose to have a Mexican theme. Since we were having a hot week I decided I wanted to keep it simple and refreshing and just bring a Margarita Fruit Dip. This dip was so delicious and I used light versions of the cream cheese and cool whip so a little better on the waist line too 🙂 Yummy!

My Weekly Menu Plan:
Monday: Turkey on Ciabatta with Sun-Dried Tomato Aioli
Tuesday: Hummus-Crusted Chicken
Wednesday: Italian Sausage and Rosemary Spaghetti
Thursday: My husband’s birthday: He’s requesting Marinated Grilled Steak, Baked Potatoes and BLT Chopped Salad with Corn, Feta and Avocado
Friday: Leftover buffet
Saturday: Caprese Tortilla Pizzas
Sunday: YOYO (you’re on your own)
