So this week is our January Dinner Club. This month’s theme is Mennonite food. Well has that ever proven to be a difficult one to come up with something that is gluten-free. My research shows me that Mennonite folks sure love their gluten 🙂 I did end up finding something that I can make gluten-free which is a good thing because that might be all I eat there lol. Actually it totally doesn’t bother me at all. I’m not a foodie and I really just love going to hang out with some great girlfriends. I’ll just eat before I go and it’ll be fine.
I’ve got some more great resources for you this week. I do hope you find these links that I collect for you each week helpful. Whatever I can do to support your menu planning endeavors I will, well except come cook your food for you…ha!

Wednesday: Two Cheesy Tot Casseroles – one for us & one to give to another family
Thursday: Roasted Tomato BLT Sandwiches
Friday: Leftovers for the family, dinner club for me. I’ll be making Schwartzies Hashbrown Casserole
Saturday: Chicken Spaghetti Bake
Sunday: YOYO (you’re on your own!)

I think your choice of recipe for your dinner club looks great! I know what you mean about eating before hand, that quickly becomes normal for those of us with allergies. I hope you enjoy the roasted tomato BLT. We love that one.

Yes I had checked that website out extensively but wasn’t crazy about their gluten-free recipes and the ingredients they required 🙁
