Welcome back! Okay so how are things going? If your kids are back to school now and you are trying to focus on getting organized, menu planning is the best place to start. Just wait until you see the difference it makes in your life, amazing! Start simply by finding three easy recipes (here’s a few of mine) and then go out and buy the necessary ingredients. Then it’s up to you which day you decide to plug those meals into. The trick is picking easy and quick recipes that won’t overwhelm you at dinner time when you’re tired and cranky. Because let’s face it that’s what happens when the clock turns 4:00 and kids are melting down around you. Yuck. Having a menu plan each week has been a lifesaver for me, I can’t stress that enough. Here are a couple of resources to help you out:

Recipe Highlight:
My favorite meal last week was soooo good. I highly recommend these Hawaiian Tacos!! Be warned though that this recipe requires a little more chopping prep. Don’t cook them on a busy night or prepare the salsa earlier in the day when you have more time. Yummy!!

Thursday: Leftover buffet
Friday: Crockpot Macaroni and Cheese served with sausage and corn
Saturday: Roasted Tomato BLT
Sunday: Picking Night!

My goal this school year is to tame my leftovers. Ideally, I’d love to not have any! But since I don’t see that happening — mainly because I chronically overcook — taming them will have to suffice.
