Hello Org Junkie Readers! I hope you are enjoying the summer season. Our family went camping this past weekend and despite it ‘raining’ on our parade, we did have a blast hanging by the campfire and playing cards.
Today I want to share with you a recipe that every family needs….a good brownie recipe.And a delicious gluten free brownie recipe is something that I have been making recently for my friends who are eating gluten free. I took our family recipe, adapted it to gluten free and tested it to make sure that it is the yummiest, easiest one bowl GLUTEN FREE brownie recipe you will find! And I am confident that it stacks up {no pun intended} to any other gooey fudgey brownie recipe you might find. We like it just as much as our regular flour version…it is that good.
You will love it because it is made in one bowl…no mixer needed. And with cocoa powder and real butter, expensive chocolate squares are not needed either. And it takes less than 5 minutest to get this into a pan. It really can’t get any better for a busy family than that!
Super Easy Gluten Free Brownies
{8″ x 8″ pan or 16 brownies}
Ingredients:
1/2 cup butter, melted
4 tablespoons cocoa powder
1 cup sugar
2 eggs
1/2 heaping cup of almond flour
1/2 cup walnuts {optional}
Directions:
1. Spray 8 x 8 inch glass pan with cooking spray. Preheat oven to 350.
2. Mix together, with wire whisk or spoon, melted butter and cocoa powder until well blended.
3. Add sugar, eggs and heaping 1/2 cup of almond flour, and walnuts. Mix.
4. Pour mix into sprayed 8 x 8 pan and spread evenly.
5. Bake in 350 oven for 24-28 minutes until a sides looks baked and toothpick comes out with just a bit of batter on it.
6. Let cool. Refrigerate for an hour or so for easier cutting into crisp squares.
7. Store in airtight container for a few days…if they last that long.

My friend made brownies for everybody yesterday & I was a wee bit envious, so I decided to satisfy my craving tonight. I’m also allergic to nuts, so I substituted 1/4 c white rice flour & 1/4 c tapioca flour for the almond flour, plus 1/8 c ground flax & 2 tbs olive oil for texture & moisture& a teaspoon vanilla, with no added time. Amazing, delicious, perfect – thank you!!!

Love this recipe! easy AND delicious. One thing that I found, is that I needed to make a double recipe in order to have the volumn of a normal size brownie.

I used what GF flour I had on hand, and used fructose instead of sugar. Also used unsweetened baker’s chocolate. Still came out great….AND easy to do! Next time I’ll use either “double the recipe” or a smaller pan, for thicker brownies.

Heaven sent. Thank you. We have a but allergy too. I used mostly rice flour, finished the “heaping half cup” with tapioca flour. I added 1/4 t xanthum gum
They tasted like REAL brownies!!.
