Hello OrgJunkie readers! It’s me, Sharon from Momof6! You know, here we are in the dog days of summer, and I just can’t muster up the inspiration to tackle an organizing project…. I feel like being lazy and enjoying something cool and refreshing…. and okay- yummy! So I thought I would do something a little different today and share with you my recipe for Margarita Cheesecake!
Margarita Cheesecake Crust:
1 1/4 cups of graham cracker crumbs
1/2 stick of unsalted butter, melted
Spray a 9-inch spring-form pan with vegetable oil spray. Mix together graham cracker crumbs and melted butter in a medium-sized bowl until well blended. Press crumbs into the bottom of your pan and one inch up the sides. Refrigerate the crust to set it.
Margarita Cheesecake Filling:
Three 8-ounces packages of cream cheese, at room temperature
1 1/4 cups of sour cream
1 cup of sugar
2 1/2 Tablespoons of triple sec (or other orange liqueur)
2 1/2 Tablespoons of tequila
2 1/2 Tablespoons of fresh lime juice
4 large eggs
Using your electric mixer, beat the cream cheese in a large bowl until light and fluffy. Mix in the sour cream, sugar triple sec, tequila, and lime juice. Then add the eggs, blending one at a time until well mixed.
Pour the filling into the crust, smoothing the top, and bake at 350° for 1 hour and 10 minutes, until the outside 2 inches are set and the center moves only slightly when the pan is moved. Remove the cheesecake from the oven and turn off the oven.
Margarita Cheesecake Topping:
3/4 cups of sour cream
1 tablespoon of lime juice
1 tablespoon of sugar
Whisk sour cream, lime juice, and sugar in a small bowl to blend. Spread evenly over the hot cheesecake. Return cheesecake to the hot oven and let stand for 45 minutes. Cheesecake might look a little soft but will set up well when chilled. Refrigerate cheesecake for several hours or up to one day.
