Hi ladies, here we are for another week of organized menu planning!  I’m excited because we have a brand spanking new menu planning button as you can see, designed by the lovely Liz at Sweet Simplicity Designs.  Isn’t it fun?  Chalkboard prints are all the rage right now so I think it’s fun to have one for MPM.  Feel free to use it if you like.

I’ve been busy this past week organizing my dining room which turned into organizing some kitchen cabinets which turned into organizing my big bathroom cabinet.  It all started with some new cabinets.  Can’t wait to show you!  Here’s a little sneak peek 🙂

Wheat Free:

So as many of you know I gave up Diet Coke on March 1st.  I still haven’t had any and it’s actually going okay.  Then on March 10th I decided to give up wheat as well.  I had done it 7 years ago for a year (for my youngest for the year I nursed him but that’s a whole other story) and never felt better.  Unfortunately after the year I went back onto wheat.  Then recently I was introduced to the Wheat Belly Cookbook and it was such an eye opener that I decided to do it again.  In only two weeks I can’t even begin to tell you how much different I feel.  I am no longer am feeling bloated, fatigued and even more importantly I’ve lost that horrible foggy head feeling.  Incredible!  I’ve been cooking gluten free (in addition to dairy, egg, fish and nuts) for 13 years for my middle son (13) who has severe food allergies so it wasn’t too bad of a transition.  Whenever you see wheat in any of the recipes I select just know that I’m substituting a wheat free option instead.


Easter Dinner:

You’ll notice on my menu plan this week that we aren’t having our Easter dinner until Easter Monday the following week.  We normally have our big Easter dinner on the Sunday evening but my hubby is working.  I’m curious when do you have your Easter dinner?  Maybe both days? 🙂

Monday:  One Pot Spaghetti

Tuesday:  Quinoa and Brown Rice Fiesta Bowls

Wednesday:  Grilled Apple Chicken served with baked potatoes and grilled veggies

Thursday:  Leftover buffet

Friday:  Crockpot Taco Meat

Saturday:  Potatoes and Sausage

Sunday:  Picking night!

    I’m sort of doing the wheat free thing too! I am following the 4 day diet thing so one day a week I will eat what ever I want……I feel amazing this way though, no more bloating, my skin cleared up, and I have oodles more energy!

    Our family is having Easter dinner on Sunday which is typically the norm around here……Happy Easter to your family!

    Big hugs to you on your new food (and no Diet Coke) journey! You are going to be great at it as you already do so much GF etc for your kiddos. Now it is mamma’s turn to feel great! 🙂 I am glad it is helping you feel better. It is amazing how we don’t realize how good we can feel until we do- LOL!

    I’ve been wheat-free for a year for the reasons you’ve described. Wheat Belly helped me get going, plus finding some great paleo cookbooks also helped since I cook whole foods.

    Thanks for hosting! Can’t wait to see your new cabinets, we need new storage in my daughter’s room and I’m looking for ideas.

    We do Easter Dinner as a late lunch after services on Sunday. I’m dropping paleo for at least the dessert that day, but the meal itself is paleo and GF.

    I, too, gave up Diet Coke…but its only been a couple of weeks…and I’ve cheated a couple of times. I was getting horrible heartburn and haven’t had ANY since I gave it up! Yay! For many months I’ve contemplated giving up wheat, I may have to check out that book! 🙂

    I’m a little late to the party this week…Monday was not kind to me.

    The wheat thing confuses me. I thought whole-wheat was good for you! But I know quite a few people who have been doing the GF thing, and it’s working wonders for them. Maybe I’ll take a peek at that book!

    Thankfully, I don’t have to do anything this weekend for Easter. My family is Russian Orthodox, and our Easter isn’t until May 5!
