Hi friends, here we are in the last week of August. No, say it isn’t so. This week for me is all about getting organized for back to school. I spent the majority of the weekend re-hauling my office. It was desperately needed and I can’t wait to show you how it turned out. It’s such a small space so I really had to make the most of every square inch.
I don’t have a garden but I do have a girlfriend with one and she shared some zucchini with me this week. Yum, yum!
Tonight we had some grilled zucchini with some spices and a little melted cheese. Oh my was it ever good! I think I’ll shred the rest up in 2 cup portions for the freezer to use later on.
Recipe Highlight:
My favorite recipe from last week goes to the Chicken Pesto Alfredo. It was delicious and easy to throw together.

When my kids were still at home I loved YOYO days! Always interesting to see what they would come up with. The son’s was usually the healthiest. The girls – anything was game.

Actually changing up my recipe for tonite because my mom brought me 5 HUGE zucchinis yesterday…. so, making stuffed zucchini boats. YUM!

Just wondering where you buy your powdered ranch dressing mix? I can’t seem to find it in the grocery stores in Canada – do you use a substitute?

The Slowcooker Pizza Pasta looks yummy and so many different ways to fix it. Unfortunately we did not get a lot of zucchini this year. I was able to freeze some for minestrone and sauteing a little later in the year. Thanks for hosting.
