Menu Plan Monday ~ August 27/12

Hi friends, here we are in the last week of August.  No, say it isn’t so.   This week for me is all about getting organized for back to school.  I spent the majority of the weekend re-hauling my office.  It was desperately needed and I can’t wait to show you how it turned out.  It’s such a small space so I really had to make the most of every square inch.

I don’t have a garden but I do have a girlfriend with one and she shared some zucchini with me this week.  Yum, yum!

Tonight we had some grilled zucchini with some spices and a little melted cheese.  Oh my was it ever good!  I think I’ll shred the rest up in 2 cup portions for the freezer to use later on.

Recipe Highlight:

My favorite recipe from last week goes to the Chicken Pesto Alfredo.  It was delicious and easy to throw together.

My Weekly Menu:

Monday:  Slow Cooker Pizza Pasta (missed from last week)

Tuesday:  Applesauce BBQ Chicken served with red potatoes and broccoli

Wednesday:  Shredded Beef Tacos served with green salad

Thursday:  Leftover buffet

Friday:  Rush-Hour Pork Stir-fry

Saturday:  Weight Watchers Cheddar Chicken Bacon Ranch Pasta

Sunday:  YOYO (you’re on your own)

    We had a bunch of big zucchini this week, too, so I breaded and baked them. Yum! It’s our last week so we’re trying to squeeze in as much fun as possible while I declutter closets.

    When my kids were still at home I loved YOYO days! Always interesting to see what they would come up with. The son’s was usually the healthiest. The girls – anything was game.

    Mmmmm… love zucchini!
    Actually changing up my recipe for tonite because my mom brought me 5 HUGE zucchinis yesterday…. so, making stuffed zucchini boats. YUM!

    Thanks for hosting MPM! It is so incredibly helpful to have one central place to go for ideas and inspiration. My favorite meal from our week was last Monday when we did BLTs because it was such a simple supper and complaint free.

    Just wondering where you buy your powdered ranch dressing mix? I can’t seem to find it in the grocery stores in Canada – do you use a substitute?

      Hi Helen, I buy it from my local grocery store here (IGA). It is with the salad dressings.

    That chicken alfredo looks so easy and yummy. I’m adding that to my list for sure! I don’t know how summer flew by so quickly either–before we know it, it’ll be the holidays! (Sorry, shouldn’t have said that! :))

    My favorite dish last week was Greek pork tenderloin with lemony orzo. My family goes for anything Greek and I am finally learning how easy it is to make.

    2. Cajun Chicken Pasta with Salad

    These were both delicious and pretty easy week night meals with just a little prep work the night before.

    We love love love zucchini here! We will be having it twice this week, actually 🙂 Last week, I think our favorite was the grilled chicken tacos. 🙂 Have a great week! Your menu looks super yummy!

    The Slowcooker Pizza Pasta looks yummy and so many different ways to fix it. Unfortunately we did not get a lot of zucchini this year. I was able to freeze some for minestrone and sauteing a little later in the year. Thanks for hosting.
