Is it really March 1st tomorrow? That makes me happy, it means we are that much closer to spring! I love spring so much.
So if you are looking for a really fast and easy meal suggestion, I’m highly recommending the Zippy BLT’s. They were so absolutely delicious. I of course added ketchup to mine though because what would be a BLT without ketchup. Yum! 🙂 To reduce the fat count you could simply sub in turkey bacon for regular. I also didn’t add the avocado to mine because I’m just not a huge fan of it.
The Sunshine Meatloaf got high ratings from my hubby but there was a little too much onion happening for me. I’d make it again but with way less onion. I’m a wimp like that I guess 🙂 The best part about this recipe though is that it makes two meatloaves. We ate one and froze the other to have some other time. One less night of cooking for me…whoot!
Okay so you all really liked the menu board I featured last week so I thought I’d share another really cool one. Seriously there is no end to the talent and creativity you people have and it thrills me to share such a variety of different options each week. Now no one is saying here that you can’t be in the menu planning club if you don’t have a pretty menu board but it sure does help make the chore a little more fun 🙂 This one is by Lori over at Paisley Passions using a $3.00 thrift store find. I know that some of you are still struggling with menu planning and I ask that you please please not give up. It literally has been one of the best things I’ve ever done and the benefits are awesome. That menu board is really great! We just use a white board that includes our menu, our to do list, and our shopping list. Not the cutest thing in the world, but it works! 🙂

I put my meal plan on the back, so if I need to change what we’re eating, its super easy to make changes while I’m at the grocery store. I live out of town, so running down to the corner store to get the sour cream I’ve forgotten isn’t an option. Its changed my life, I used to stress if I hadn’t picked something to cook by 4:30. It eliminates all of that to look whats on the menu for tonight & just go with it!
