I adore Focaccia bread. The kind with lots of yummy garlic, rosemary and Parmesan cheese. Yum! I make the dough for this bread in my bread machine…really one of the best inventions ever. I love the results without all the work. Are you one of those people that has a bread machine and yet never uses it? In my line of work I happen to see a lot of bread machines collecting dust in kitchens and in thrift stores. Why is that? It’s so easy to use, I promise you won’t even break a sweat. Why not bring those bread machines out of hiding and give this delicious bread a try.
Bread Machine Focaccia Bread
Ingredients:
1 1/2 cups water, 8o-90 degrees F (27-32 degrees C)
3 tablespoons extra virgin olive oil
1 tablespoon of Italian seasoning
2 teaspoons of salt
4 1/4 cups flour
2 teaspoons yeast, active dry, instant or bread machine
Place all ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Place the bread pan in the maker. Select Dough/Pizza Dough setting and dough size (large-2 pounds). Press start to mix, knead and rise. When cycle is completed remove dough from pan, punch to deflate and let rest 10 minutes before continuing.
Brush a pizza pan with olive oil and sprinkle with cornmeal (cornmeal is optional). After dough has rested, place on pizza pan and spread out with hands to fit pan. Cover loosely with plastic wrap and let rise in a warm place until about doubled in size, about 40 minutes.
Preheat oven to 450 degrees F (235 degrees C).
Ingredients for topping:
4 tablespoons extra virgin olive oil
1-2 teaspoons garlic salt (depending on taste)
1-2 teaspoons dried rosemary (crushed between fingers)
1/2 cup freshly grated Parmesan cheese
With oiled fingertips, press indentations into the dough all over about 1/2 inch deep. Brush dough with olive oil. Sprinkle evenly with remaining ingredients. Place in preheated oven and bake until golden and puffed with a crispy crust, about 10-15 minutes.

I got a bread machine from my friend JUST to make dough. Have made this recipe 5x now. LOVE IT. I use garlic salt for the salt in recipe, gives it more flavor. And sprinkle some on top before baking as well as topping it with shredded cheese.

I’m going to have to give this recipe a try. I have a recipe for focaccia bread that starts with frozen bread dough, but it is so elastic that it springs back as you try to roll it out and I end up using a lot of energy and hurting my arms whenever I make it. My son-in-law loves that bread, so maybe I can start with this dough and use the same toppings as the original recipe. Thanks for sharing!

I really want to start making my own bread and rolls. I bought a Cuisinart bread machine from Costco… and then took it back thinking I’d use my mixer and do it by hand. Hmmm. Wondering if that was a bad idea. 🙂 Love this recipe and anxious to try it!

Dough takes approx two hours to do it’s thing in the bread machine. And yes the bread in my picture is from one batch of dough.

In my machine dough takes like 15 min, then turn out into oiled bowl to rise like another 15. Then put on my Pampered chef lg pizza stone, poke the holes in top and spread around. Prob an hour total. And makes a Large size.

I use my bread machine all.the.time. In fact, my mom saw how often I used mine (which she bought me for Christmas about 15 years ago) and asked for one for herself last year. She gave it to me two weeks ago…which means mine is making a trip east to my dear friend!

This is a great recipe… I make it all the time now (like 2 or 3 times a month). I will never buy foccacia bread again. If I don’t have Italian seasoning, I use a combination of 1tsp basil, 1/2 tsp oregano, 1/4 tsp thyme, and 1/4 tsp rosemary. To make it dairy-free and vegan for our friends, I have omitted the parmesan and made the topping with 1 tsp rosemary, 1 tsp salt, and 2 minced garlic cloves. I have never had this recipe fail 🙂
