Hi everyone! I hope you all had a beautiful Easter. I’ve been having such an amazing time with my family. It’s been quite the relaxed and silly time. Have I told you how much I love silly? It really is the best!!
Not all my recipes have been turning out as well as I would have hoped (I burnt a few things, oops) but you know what, not even that has phased me. We just embraced Plan B and carried on, it’s all good 🙂
So I’m keeping this short after playing many a hands of Euchre last night and staying up much too late. Time to enjoy another great day and perhaps a little nap at some point 🙂
We’ll be eating all family favorites this week, how about you?
Monday: Ham and Pineapple Homemade Pizza in Minutes
Tuesday: Easy supper of Mexican-Style Ravioli
Wednesday: Makeover Creamy Italian Sausage Pasta
Thursday: Daughter’s 13th Birthday ~ at her request we’ll be having Baked Teriyaki Chicken served with Shredded Potato Casserole and Angel Food Cake/Chocolate Mousse Frosting for dessert
Friday: 13th Birthday Rock Star Party ~ dinner out! Dessert will be Easy Cherry Cheesecake (so good!)
Saturday: Leftover Buffet
Sunday: Church Potluck ~ Taco Pasta

I had a lot of fun planning my menu for this week. I included a recipe for a pasta sauce I love – and if you add cream it tastes just like La Madeleine’s tomato basil soup. Yum!

Isn’t it great when it’s time to cook a special dinner for someone in the family? One of my favorite things to say is “So, what can I make for you this week” and know I can actually pull it off.
I’m running in my first 10k in five years this Sunday so our meal plan is synched with my pre-race planning. I’m so glad I have menu planning better organized because it will be especially important to eat well this week.

Rock star party — sounds fun! Happy birthday to your daughter! I always love to hear what my kids pick for their birthday dinner. That’s how you find out what their favorites really are! I will be saving that cheesecake recipe for another time. I’ve been working on perfecting my pumpkin cheesecake, but it takes sooooo long!

Have you tried the Makeover Creamy Italian Sausage/Pasta dish before? I LOVE meals like that, but being a WW member, most of the time recipes I find are too high in fat.

Yes we’ve tried that one in the past and loved it. I always sub in low fat cheese, whole wheat pasta, turkey sausage, etc. whenever I can.

Every week I try to come up with a plan, and every week I change my plans! Alas, it is difficult to come up with ideas for every day when I don’t have a set of recipes to draw from. I don’t prepare meat or vegetarian dishes with melted cheese. Would you believe that really cuts down on simple, delicious recipes out there? {my husband thinks he isn’t picky, but he really is which makes things even more stressful for me! and don’t bother making the same thing twice.}

Yes I highly recommend you create a recipe index for your family. Also try finding a few food blogs out there that cook similarly to how you do. I find that particularly helpful when searching for recipes.

I’m still struggling with the idea of being scheduled but it is a good exercise since I tend not to think about food until 5 min before it is time to have dinner. I get busy and just forget. This may help me be prepared. I’m trying to help us eat healthy dinners so that is the other motivation. Thanks for all the great ideas and for encouraging us to plan ahead!!!

Thanks for hosting another great MPM. This week I am excited to make one of my Great Grandmother’s Mennonite ethnic dishes – Beef Borscht! It is one of my favourites, and even though I never met my Great Grandmother, I love how I can “get to know her” a little bit by making one of her recipes. I think it’s neat when recipes get passed from generation to generation. 🙂

Your menu looks great! I checked out your cheesecake recipe and can’t wait to try it. It’s almost exactly like my peanut butter pie recipe, except I use peanut butter in place of one of the cream cheeses, and no cherries. I’ll be trying it, plus your Baked Teriyaki Chicken and Shredded Potato Casserole next week.

I’m new to MPM, and it’s our second week of menu planning at all. So far, it’s been a HUGE success for us. We were eating out so much that we were actually bored of it, not to mention the overspending and eating terribly. Menu planning has made dinner so much easier and I made three weeks of planning on my first try…so great!
