Menu Plan Monday ~ Oct 26th


Hello!  Hope everyone had a nice weekend 🙂

Did you get a chance to check out all the delicious appetizer recipes?  Oh my was it hard to choose just one recipe for my potluck but I did AND I was not disappointed either.   This recipe combined cheese, roasted garlic and bread, a combination that got my mouth watering just thinking about it.  The winning entry is #32 – Lori of Not The Mother of The Year for her Roasted Garlic Brie in Bread recipe!!!  Boy how I wish I had a picture to share with you all but we actually didn’t get around to eating it until about 1:00 in the morning and then we absolutely devoured it in about 10 seconds flat.   It went over really really well 🙂  Thanks Lori for making me shine!

So next on my list of exciting things to tell you is the recipe highlight of last week.  My entire family LOVED  the Ham-Noodle Bake.    It was easy to prepare and it had a nice little kick to it due to the added horseradish.

Monday: Company for dinner ~ Baked Teriyaki Chicken (family favorite) served with Special Twice-Baked Potatoes (ff)

Tuesday: Apple Cinnamon Pork Tenderloin (new) served with rice and broccoli

Wednesday: Black Bean Quesadillas

Thursday: Leftover buffet

Friday: Spaghetti

Saturday: Oven Chicken Fingers (new) and french fries

    I have a pot of black beans soaking tonight. I will have more than I need for my recipe, so I think I might try the quesadillas, yum!

    Your quesadillas sound very good. I’m loving black beans – been cooking them from dried and found they were so much cheaper but just as good that way.

    Everything sounds delish, once again!! To answer your question about recipe highlights, I went off track last week with one recipe and subbed in the butternut squash ravioli that is on this week’s menu again- ridiculously delicious, and the crockpot beef stew recipe that I did last week was a big hit in our house!!

    I have to be honest, I’ve never done chicken fingers in the oven except for store-bought. I fry my chicken fingers and they are so good I’ve never tried anything else. All that said, these oven baked chicken fingers look pretty good and easy. I actually bookmarked them to try, which means I probably will. I’d be curious to know what you think of them (new recipe or tried-and-true).

    Same here, I’ve always pan-fried homemade chicken fingers. So I’ll try that baked recipe too.

    For highlights last week, I think it was stirfry noodles. I used Kraft Asian Sesame Dressing to season it since I ran out of soy sauce. But it turned out really well!

    The apple cinnamon pork tenderloin sounds wonderful! I made a pork tenderloin last night. For lack of a better idea, I just poured some applesauce over it and let it bake. although it was good, I wish I found this recipe first! Next time! Thanks for sharing!

    The Black Bean Quesadillas sound great!

    The highlight of last week was Swiss Steak. I hadn’t made it for a while, so everyone was delighted to see it on the table. Several of us met up in the kitchen the next day to try to sneak the leftovers for lunch before anyone else go to them. Fortunately, there was enough for everyone.

    I love black bean quesadillas! The best recipe at my house was salsa cheddar chicken with corn fritters (it’s actually on this week’s menu but my menu starts on Saturday so we had it last night). My hubby was home late so he was eating on his own and I kept hearing “mmmm, oh this is so good, yum!” coming from the kitchen!

    I’m curious to hear how the pork tenderloin turns out. The terriyaki baked chicken and the twice baked potatoes look very yummy. I’m trying to Ham and Noodle bake at my house this week as well as some warm hearty comfort food that will make leftovers for DH’s lunchbox.

    Pork tenderloin is on our menu this week, too, and I’m now considering using the Apple Cinnamon Pork Tenderloin recipe instead of my own. I’m pretty sure my kids would go gaga over it!

    I’m very curious about the Apple Cinnamon Pork Tenderloin! I cooked an apple pork dish recently that didn’t live up to my expectations, and I’m looking for a new recipe. Can’t wait to hear how it turns out!

    That cranberry orange sauce for the oven chicken fingers sounds delicious. I might just need to make the sauce this week for dipping our chicken kebabs.

    Your menu sounds yummy! One of our highlights from last week’s menu was the Cheesy Chicken Pot Pie from the Fall 2009 Kraft Food & Family magazine. It was super easy to make and delicious. Even DS#2 who stated (with that 15 yr. old attitude), and I quote “Man…I don’t like chicken pot pie. Why are you making this crap. I’m eating cereal.” gobbled this up and came back for seconds.

    I’m having baked chicken, marinated in sweet and sour sauce,and potatoes and vegfor Monday, meatloaf and bread and veggies on Tues. I’m still in creative mode since it’s the morning. Fish sticks (Trader Joes) with rolls and veggies……um. a working person and don’t always want to cook alot when I get home. Some weeks I’m not creative.

    I am back after miss last week as my son was sick in hospital. I have to say I really missed my menu plan last week. It helped me feel on top of everything. Thank goodness I am back on track this week. Thank you for the inspiration.
