Hey gang! Last week I got some great comments from ladies just trying out menu planning for the first time. They were so encouraging to me and I hope they are to you as well.

I ended up playing with my 4 yr. old son during that time, which was a joy! I’m anxious to explore your recipes now. When I get better at this, I’ll send you some of mine.”

Thanks for the kick in the fanny to get moving and meal plan. It makes it so much easier when I walk in the door after being gone for 11 hours during the day!”
Now that’s what I’m talking about girls!! Maybe today is the day you give menu planning a try? Go for it!!
So guess what? I had yet another recipe disaster this past weekend. I made some Chocolate Whole Wheat Zucchini Muffins and somehow missed the entire second cup of flour. Yep it’s true. Oops. The worst part? There was no Plan B solution for me to somehow salvage them. I had no choice but to throw them away…all 24 of them…grrr. I will definitely try to make them again though and this time I’ll pay more attention to what I’m doing lol.
So here’s what’s on our menu this week:
Monday: Black Bean & Veggie Quesadillas
Tuesday: Kristie’s Magically Moist Chicken served with baked potatoes and broccoli
Wednesday: Asian Steak served with french fries and grilled veggies
Thursday: Fettuccine with Mushrooms and Tomatoes
Friday: Leftover buffet
Saturday: Whole Wheat Waffles and sausages

Sorry my muffins did not turn out well for you, that second cup of flour is important 🙂 I think we all have days and times like that. I have left things out of recipes before, usually it is something like the baking soda. Another important ingredient.I hope you get a chance to try them again.

So you are a little bit off in the flour, oh well. I am teaching my daughter how to cook, and she says, “Mommy, I just don’t feel like I know how to cook. All I do is follow recipes!” Well, that is a great start–following recipes! Just a tip for the day.. LOL. After a while, you just get a feel for what looks right/ muffin texture or bread texture, etc. But I know you work with gluten free recipes a lot, so that changes the texture quite a bit from traditional flour based recipes. This week I am highlighting some bargains also.

Going for Week #3! My menu last week worked out as planned, with the exception of no one being hungry one night, and another night when we got Burritos from our favorite Mexican food stand to celebrate the boys passing their Belt test as Tae Kwon Do.
I am moving into a crazy, insane schedule for the next 12 weeks or so, so crockpot recipes are going to be a must at least 2x per week.
Oh, and I almost forgot, even with only cooking the three meals last week, we had enough leftovers for lunches this weekend. Nothing was wasted, and I actually had bread left on Sunday morning :)(not as many PB&J sandwiches served for lunches this weekend!)

I am sticking to my menu planning but not going with the 15 recipe at the moment because I am at a stage of working my way through my freezer to empty things out and a lot of the meat in there has nothing to do with meals that the girls and I like it is due to the fact that we get a beast and sheep killed every so often at the farm and I have to take the meat how my MIL decided it should come and a lot of it is not the nicest or the most sensible – it is great to save money but the only things that are handy really are the roasts the rest of the cuts are so fatty and not that nice at all – gotta work some way out of getting that organised properly

A friend of mine got me started doing this a little over a month ago. To be honest, it’s such a relief! I even plan out breakfast and lunch because when I wake up I can’t even think about what to make. Now I just go over to my menu and start making what I wrote down. No thinking required! And with all the other things I need to think about throughout the day, it’s such a relief to not have to think about that. 🙂

Thanks so much for the great tips and inspiration of MPM. I am in my 2nd week now and am totally hooked! I actually plan all 3 meals per day and snacks and it is a godsend.
