My son loves these cupcakes and I’ve been meaning to post the recipe for awhile now. These also happen to be dairy and egg free. I usually make up a big batch and keep a bunch in the freezer so I have them ready for birthdays and school functions. He calls these his bumpy cupcakes 🙂
Citrus Chocolate Cupcakes
1 1/2 cups gluten-free flour blend*
1/2 cup sugar
1/4 cup baking cocoa
1 tsp baking soda
1/2 tsp salt
1/2 cup orange juice
1/3 cup water
3 tbsp canola oil
1 tbsp white vinegar
1 tsp vanilla extract
1/3 cup mini semisweet chocolate chips (I use Enjoy Life Foods brand)
1 1/2 tsp icing sugar
In a bowl, combine flour, sugar, cocoa, baking soda and salt. Combine the OJ, water, oil, vinegar and vanilla. Stir into the dry ingredients just until moistened. Fold in chocolate chips. Coat muffin tins with nonstick cooking spray; fill half full with batter. Bake at 375 degrees for 13-16 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from the pan to wire rack to cool completely. Just before serving, sprinkle with icing sugar. Yield: 1 dozen.
*This is the gluten free flour mix that I use regularly and have experienced the best results with. I use it to replace regular flour cup for cup in any recipe. I make up a big batch of it and keep it in the fridge to have on hand when I need it.
All Purpose GF Flour Mix
1 cup brown rice flour
1 1/4 cup white rice flour
1/4 cup potato starch
2/3 cup tapioca starch
3/4 cup sweet rice flour
1/3 cup cornstarch
2 tsp xantham gum

Thank you so so much for this recipe. Earlier this month I found out that myself and my 20mth old daughter are Celiac, as well as allergic to soy, casein and eggs.
What a great recipe and I actually just bought those choc chips at the health food store!

for the comment a few above – xantham gum is a binding agent that helps give gluten free foods a little more elasticity and chewiness so it’s a little closer to what many people are used to (ie gluten-y foods)

i so wish i’d looked at this a few days go!!! DS bday is today. this morning i made 2 goodies..1st batch cupcakes and 2nd batch cake. never bake before coffee. i used all tapioca starch by mistake instead of my ‘blend’..and i left out the baking soda. a bit um..chewy;0 the cake is great. i plan on posting it in a day or two.

Mmm…. I’m going to try these with Spelt flour, I bet that would work too. It’s my favorite gluten-free flour and it seems to work very well as a substitute in any recipe I’ve ever tried it in. These are going to be good for a choco-fix!

Have you ever tried using sorghum? I’m a bit torn because a lot of sites say not to use only rice flours…but your recipe for GF flour mix has nothing else but. Is it because of a bad experience? (I just bought a ton of different flours and wanted your opinion before I mix them together!)

Tried these tonight with King Arthur’s GF mix and substituted grape seed oil. The tops got crunchy a little. Is this normal? Inside was soft and moist.
