Welcome everyone! Can you believe here we are already at the end of July? My word time does fly.
The kids and I are heading off this week to kid’s church camp. The head cook was kind enough to give me a copy of the week’s menu, not for MPM puposes (although that is certainly an added bonus) but so I could try and match up my food allergic son’s meals as much as possible. Such a thoughtful gesture that means so much to me.
I want to highlight a delicious recipe that we tried this weekend that my beautiful friend Susanne recommended. It’s called Crockpot Thai Chicken and it was really very good. If you are looking to escape the heat of your oven this week why not put your slow cooker to work. Yummy, thanks Susanne!
So here’s what we’ll be eating, sorry I don’t have my usual recipe links for you this week 🙁
Monday: Taco Salad Bowls
Tuesday: Pasta with meat sauce served with garlic bread, veggie/dip
Wednesday: Chicken served with french fries and corn
Thursday: Roast beef/gravy served with mashed potatoes and carrots/peas
Friday: Ham served with mojos and vegetables
Saturday: Hamburgers served with salad and chips

I would like to know what allergies your son has? I am a coealic myself so I know that knowing in advance the meals on camp would help immemsely.

Mojos are battered potato wedges. Not too healthy but really good 🙂

That is wonderful that they give you the camp menu ahead of time. Dealing with allergies, especially at something like camp, can be so challenging, though if I know you, you’re totally on top of it! 🙂

I had no idea it was that easy to make a taco salad bowl! I’ll be doing that for myself the next time I make tacos for the family.

I cannot wait for it to warm up so we can eat lots more salads. I really try to eat seasonally, so it is hard to do in winter.

Happy Monday! Your menu sounds good. I posted mine. Can’t believe I have done Menu Plan Monday for a few weeks now. It’s kind of nice to have a plan even if it sometimes changes.

That looks so good! When my children were home, I would sit down during the week and plan out the next weeks meals. I would pour thru my cookbooks to plan on trying out a couple new recipes each week. On my plan sheet, I would right down the cookbook and page for the recipe of the meal I planned to make. I would make out my grocery list and use a calendar for the menu. What is nice about planning is that if on Monday something interferes with the menu, you can switch out for another day and you always have the ingredients needed to prepare the meal. Today with just 2 of us… I am not good about this but even with 2 it is a good idea to plan. It is always fun to schedule trying something new. 🙂 love your ideas.
The Thai Chicken in the crock pot was the star of our menu last week! We loved it!

Had to comment on how delicious this meal looks. Looks like I will have to make some broccoli for my kicks here at home.
I saute almost a whole bulb of garlic. or however many garlic cloves you have. Take skin off and cut end and chop fine.In a stainless steel pan I pour some olive oil and heat and put garlic in oil until garlic is soft but not burnt, I then take fresh broccoli cut up and mix up with it. I cook until the broccoli stalks are tender as we like soft broccoli here then I sprinkle parmasean cheese, kosher salt,fresh ground pepper and put the lid on to melt cheese then serve. I can eat this by itself and so can the other 5.

Sounds like you’re going to be busy. I wasn’t thinking with my head, just with my stomach when planning this week. I got a new cookbook and I wanted to try some recipes before freezing them, and one of them will be roasted in the oven (the Urban Garlic Chicken) and for the Cheese Steaks I need rolls. I might cheat and cook the chicken the crockpot instead, and I might buy rolls instead of baking them since I just found out they are calling for it to feel like 105 or so here on the days I’ve planned to have these meals. Not too bright of me, huh?

Two of my sons have allergies too. Sometimes I am so jealous of those people who just have to worry about flashlights and batteries.

Hi … I wondered if you know of any good blogs for people with Irritable Bowel Syndrome? I have been diagnosed with it and have really been struggling to find foods I can eat that my family can also stomach. If anybody knows of any sites or blogs, I would LOVE to have that info!!
