Hi everyone, I’ve got to confess I didn’t do so well with the meals I had planned last week. Hubbie was actually out of town so the meals just kept getting simpler and simpler for me and the kids. I must say it ended up being a nice break 🙂
I did manage to make the Chicken Coleslaw Wraps though and they were excellent. What a great combination of flavors. I made them using the Weight Watchers 100% whole wheat wraps and they were so good. We will definitely have these again. Did anyone else try them?
So I’ve got three new recipes on the menu this week but I’m hoping to add to my new recipe collection even further during my MPM blog crawl. Hope someone has some good ones for me 🙂
On the menu for us:
Monday: Pork Schnitzel, hashbrowns and veggies
Tuesday: Penne with Veggies ‘N’ Black Beans
Wednesday: Crunchy Poppyseed Chicken Salad served with Whole Wheat Oatmeal Bread (bread machine)
Thursday: Chicken ‘N’ Spinach Pasta Bake
Friday: Leftover buffet
Saturday: Beef Vegetable Soup (this one I’ve made before and it’s delicious!)
I’ll also be making these Apple Wheat Muffins this week, they look pretty yummy!

My husband is away Tuesday and Wednesday this week. My 24 y/o son loves fish as well as I do (dh isn’t quite so thrilled) so I often take advantage of business trips in order to cook fish. We are having blackened tilapia Tuesday. Yum!
Seeing the recipe for wheat oatmeal bread, reminds me that I should actually use our bread maker. I go through stages where I use it all the time, then forget about it for months!

Don’t feel badly. My husband works obnoxious rotating shifts and the weekends he is on days I have a hard time forcing myself above and beyond the barest minimum and frequently fall off the menu wagon. 😉

I didn’t know WW made wraps – I’ll have to look for them in my grocery store.
I love the wraps from last week! Wraps are so easy to make and so tasty. Unfortunately my kids hate eating things that are mixed together. Everything must be separate on the plate. Which makes food such as wraps, stews, or anything normal off limits.
Why do we let children eat, anyway?

I have to say that Chicken salad looks pretty good! I’m trying to use up some of the meats I found when I defrosted my freezer this week – wish me luck. I didn’t realize how many turkey burgers I still had! I wish I had planned to have a Memorial Day cookout now!
