Hi everyone! My computer went down on Tuesday night and I couldn’t check email or blogs all day today! Oh my gosh I seriously had the shakes from withdrawal….that was hard!!!!! So here it is almost midnight and I’m cruising the sites and see that Sandra has Slow Cooking Thursday up already. Her recipe looks soooo good too! On Tuesday I made Slow-Cooked Coffee Pot Roast and it was delicious and so easy which is always a plus in my book. So I don’t want to infringe on any copyright issues so I’m going to make sure I cover all my bases giving credit where credit is due.
Slow Cooked Coffee Pot Roast
taken from Taste of Home’s Slow Cooker Classics 2006
recipe from Charles Trahan, San Dimas, California
1 boneless beef sirloin tip roast (2.5 lbs), cut in half
2 tsp canola oil
1.5 cups sliced fresh mushrooms
1/3 cup sliced green onions
2 garlic cloves, minced
1.5 cups brewed coffee (day old coffee works best)
1 tsp Liquid Smoke, optional (I left out cause I have no idea what it is)
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper
1/4 cup cornstarch
1/3 cup cold water
In a large nonstick skillet, brown roast on all sides in oil over medium high heat. Place in a 5 qt slow cooker. In the same skillet, saute mushrooms, onions, and garlic until tender; stir in coffee, Liquid Smoke if desired, salt, chili powder and pepper. Pour over roast. Cover; cook on low 8-10 hours or until meat is tender.
Remove roast and keep warm. Pour cooking juices into a 2 cup measuring cup; skim fat. In a saucepan, combine cornstarch and water until smooth. Gradually stir in 2 cups cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with sliced beef.
Yield: 6 servings

Oh oh I love roast….I would have never thought of using coffee though, but you know how much I love it LOL

The Liquid Smoke is a small bottle that usually is sold next to the Worcestershire sauces and all that. It gives the food this wonderful grilled taste…I always keep a bottle at home 🙂

P.S. About the hallway shelves-I’d like doors too! 🙂 I’d like to have doors on everything-especially the TV. Let me know if you have ideas for any do-it yourself doors or types of furniture. I would like to have our TV in an armoire with doors someday too.

Liquid Smoke is exactly what it says. Smoke that has been condensed down to a liquid. You buy it in little bottles at your grocery store. Gives that smokey flavor like in beef jerky.

my slow cooker died. I have to refrain from Trigo’s Department store and wait for the new one after holidays next week. Needless to say we have had eggs twice this week as well as frozen pizza. Ahhh!

Hi Gibee, I was worried that you would be able to taste the coffee (I can’t stand coffee) but no you can’t taste the coffee but don’t tell that to all the coffee drinkers…lol. Laura
