Boy the cold whether has sure moved in on us. We had to turn the heat on in the house this weekend. I’m simply amazed at how quickly the weeks are flying by. This week I’m trying another one of Stacy’s recipes…Crockpot Chicken Sante Fe. Stacy is away on vacation so she won’t be participating this week but if you haven’t been by her recipe site than you really must check it out here. All and all I’m trying three new recipes this week. Tuesday and Friday’s meals are from the Taste of Home’s Slow Cooker Classic magazine but unfortunately they aren’t online so I’m unable to link them up for you. I’ll let you know on Slow Cooking Thursday hosted by Sandra whether or not I recommend them and I’ll post one of the recipes then for you too.
Monday: Fresh tortellini and pasta sauce (from the deli…not homemade or anything)
Tuesday: Slow-Cooked Coffee Pot Roast (T of H Pg 138) served with potatoes and broccoli
Wednesday: Crockpot Chicken Sante Fe with rice and frozen veggies
Thursday: Leftovers (I know surprise, surprise)
Friday: Easy Crockpot Meatloaf cooked with red potatoes and carrots (T of H Pg 138)
Saturday: Burgers and Fries
Sunday: make yourself a sandwich and be happy about it…lol.

It all sounds good! We’re having leftovers tonight… but they are such yummy leftovers we don’t mind at all!
The meal I list for Sunday is always our midday meal and is nearly always a crock-pot meal. For supper on Sunday night our menu is always the same — popcorn, cheese & crackers, and usually some sort of fruit — often apples. Maybe someone else would like to try our Sunday night tradition too.

YOU ALL HAVE SUCH GREAT MENUS. SINCE I BROKE MY ARM (WRIST) MY MENU IS NOT SO GREAT. TONIGHT WE HAD HAMBURGER HELPER AMD I WAS LUCKY MY DAUGHTER WAS HOME OR OTHERWISE I WOULDN’T EVEN OF BEEN ABLE TO CUT OPEN THE PLASTIC INGREDIENTS WRAPPERS. GEE ONLY ABOUT 7 MORE WEEKS TO GO.

Hi Laura! I’m Stacy’s sister and I can vouch for the Crockpot Chicken Santa Fe…we fix it all the time at our house too and love it! Stacy will be back later in the week; my hubby & I went on the first part of their vacation with them (weekend) so the guys could golf. Hope you like the chicken dish as much as we do in our family!

Hi Laura, love the idea and since I meal plan by the month this is something I can do with ease (thank goodness) I do warn you all though, I live in the Bahamas and we do eat very different things on occasion so be ready!!!

Laura you’ve tried the Bruschetta chicken bake, I brought it to work one day…I think you’ve made it as well…remember J. made it and she didn’t like it at all. We liked it though.

Oh wow, Laura, thanks so much for highlighting my recipe site! 🙂 That’s so sweet, it really made my day. I hope you got a chance to try the Chicken Santa Fe, it’s one of our favorites. I may make it this weekend also (we just got back from vacation and I don’t have much planned to cook). It’s easy and good, but nothing fancy. We eat it over fat-free tortilla chips, sort of like really chunky nachos!
I’ll be back to play next week, once I recover from post-vacation destressing, that pile of laundry and get back on track. Thanks again for the shout-out! 🙂
