Hi everyone!  I hope you all had a great long weekend and enjoyed your Thanksgiving holidays!

Today I’m excited to tell you about a new cookbook that’s going to be coming out real soon on December 22nd.  Erin from $5 Dinners has written a cookbook complete with over 200 recipes that all cost less than $5.00 to make.  I haven’t yet read it (and this isn’t an affiliate link) but I’m a huge fan of Erin and her site and just wanted to pass the word along.   Oh and if you pre-order Erin’s cookbook don’t forget to let her know and she will send you a bonus $5  Dinner Mom’s Holiday Recipe pack for free.  More details can be found here.

Our recipe highlight from last week belongs to the Baked Pasta with Chicken Sausage.  My hubbie gave it a 9 out of 10!  It does require a little more prep work than I’m normally use to so I was glad I chose to make it on the weekend when hubby was around to help me :)

On our menu this week:

Monday: Meatball Hash Brown Bake

Tuesday: Honey Hoisin Chicken in the Slow Cooker served with rice and broccoli

Wednesday: Italian Stew

Thursday: Leftover buffet

Friday: Quick Homemade Pizza

Saturday: Garlic Lime Pork Chops served with potatoes and carrots

Menu Plan Monday ~ Nov 2nd

Thank you so much for all the uplifting and encouraging comments so many of you left for me on this post.  I have read them over and over and am so thankful to have so many supportive friends in real life and in blogland.  We are hanging in there, taking one day at a time.  I’m so sorry that so many of you are also experiencing something similar.  It’s so sad and I pray things turn around soon.

Now more than ever we will need to get tight with our grocery budget so I’ll be actively looking for ways to do just that.  First and foremost I’ll be trying to use up stock from the pantry and freezer because you never know if moving is right around the corner for us.  So this week’s menu is designed around what we have in the house to use up.

The Apple Cinnamon Pork Tenderloin didn’t really work out for me last week.  I had no idea what cooking apples were so just used some Gala apples that we had in the house.  They didn’t create any juice at all.  Once I added some apple juice though it turned out okay but I’m not sure I’d make it again.

I’m very excited to use some recipes from my new Make It Fast, Cook It Slow: The Big Book of Everyday Slow Cooking cookbook by Stephanie O’Dea, which Stephanie herself sent me to try out.

For those that don’t know who Stephanie is, she is the one who runs the fabulous A Year of Slow Cooking blog.  Last year she committed to using her slow cooker every day for the entire year.  Some of her recipes we’ve tried and enjoyed from her site in the past are Salsa Chicken and Black Bean Soup and Brown Sugar Chicken, both of which are also in the cookbook.  So many great slow cooker recipes all in one place, super easy too and as a side note Stephanie’s recipes are also gluten free for those following a gluten free diet as I do with my son.

The only downfall of the book is that there are no pictures included but Stephanie’s reasoning behind that was to keep the cost of the book down.  It retails for only $14.99 and includes over 300 recipes!  Stephanie has pictures on her website though of many of the dishes if you like to see a picture of the finished product.  I definitely think this book would make a terrific Christmas gift!

Tuesday: Sun-Dried Tomato and Feta Tri-Tip served with rice and broccoli

Wednesday: Makeover Creamy Italian Sausage Pasta

Thursday: Leftover buffet

Friday: Homemade Pizza

Saturday: Rotisserie-Style Chicken served with mashed potatoes and veggies

Hello!  Hope everyone had a nice weekend :)

Did you get a chance to check out all the delicious appetizer recipes?  Oh my was it hard to choose just one recipe for my potluck but I did AND I was not disappointed either.   This recipe combined cheese, roasted garlic and bread, a combination that got my mouth watering just thinking about it.  The winning entry is #32 – Lori of Not The Mother of The Year for her Roasted Garlic Brie in Bread recipe!!!  Boy how I wish I had a picture to share with you all but we actually didn’t get around to eating it until about 1:00 in the morning and then we absolutely devoured it in about 10 seconds flat.   It went over really really well :)  Thanks Lori for making me shine!

So next on my list of exciting things to tell you is the recipe highlight of last week.  My entire family LOVED  the Ham-Noodle Bake.    It was easy to prepare and it had a nice little kick to it due to the added horseradish.

Hello!  Thanks for joining me here! I’m so happy to see so many of you taking the time to plan your meals and have an organized week.  Woohoo!  We had quite a few newbies to Menu Plan Monday last week and I just want to say a big welcome to all of you.  I hope you found your week ran so much smoother with a few minutes of advance preparation.

I’m actually going to keep this pretty short today as I’m not feeling so good.  I’m thankful that I have you guys to hold me accountable with my own meal plan because it would be so easy to put it off.   If I did though I’d be paying for it all during the rest of the week so it’s so much better that I just push through and get er done :)

Oh and if you are a fan of Taste of Home like I am, be sure to come on back tomorrow for a little contest I’m going to have.  Should be fun!!

Menu Plan Monday ~ Sept 14th

Hello my menu planning crew!  Hope you are all doing well.  We are transitioning into fall here so this weekend I switched all the clothes around.  All the shorts and tank tops have been put away and the long sleeve shirts and sweaters have been pulled out.  It’s always so sad for me since our falls are so short yet our winters so very very long. Can anyone else relate?

It was comforting to break out some yummy homemade soup though last week.  The Loaded Baked Potato Soup was delicious served alongside some warm homemade bread straight out of the bread machine.   So good!  I love potato soup so much I’m going to make a different potato soup recipe this week just for the fun of it :)
