Welcome! Thank you all for the birthday wishes last week, I really appreciated it! Please forgive me if I didn’t get a chance to personally thank you.
The winner of last week’s Heavenly Homemaker’s Guide to Gardening and Preserving ebook was Kristen of Frugal Antics of a Harried Homemaker. Kristen’s Menu Plan Monday post last week included instructions on how to make homemade bagels. That’s something else on my list of things to try one of these days, they looked delicious!
So how’s everyone doing today? I just got home from a bit of a mini road trip with my girlfriend and we had such a glorious time. Well except for the part where she made me stand on a bridge far far above the land for a photo opp. I so wasn’t impressed with that. Have I told you I’m afraid of heights?
Aside for that small moment where I feared for my life, the rest of the trip was great! :) It’s always nice to get away if only for a little while. I mean I love my kids but boy is it nice to carry on a conversation without being interrupted. We went to an amazing Mexican restaurant. I had a yummy tostada with yam fries and for dessert some coconut lime meringue pie. Yep, I had to be rolled out of there.
Now I’m sitting here trying to come up with a menu for this week. Nothing is jumping out at me. Strange how some weeks it’s so easy to select recipes for the week and other times it can be so difficult. Maybe the trick is to do up my menu when I’m really really hungry because that way everything will be sure to appeal to me :) Right now though I’m still full from the weekend!

Monday: Fajitas
Tuesday: Pasta and Zucchini
Wednesday: Wienie and Smore Roast as part of our July 1st celebrations!
Thursday: Crockpot Brown Sugar Chicken (I’ll be using a whole chicken) served with perogies and salad
Saturday: Grilled Honey Garlic Pork Tenderloin served with baked potatoes and veggies

Menu Plan Monday ~ June 22nd + giveaway!

Hey look at that, we meet again! Your commitment is awesome and I’m sure your families are totally appreciating all your hard work!
So I have so much to share with you today starting with my FIRST ever attempt to can something EVER. Canning is something else I’ve been putting off because the thought of it totally intimidated me. One by one I am trying to tackle these silly fears of mine. I was so scared but I followed a very simple recipe and the advice of an amazing ebook and voila, I have Strawberry Rhubarb JAM!!
I’m still in shock that I pulled the whole thing off (with only a few frantic moments of panic) and now I can’t wait to make more! Is anyone else afraid to give canning a try? I’m going to give these away as teacher gifts along with some homemade bread of some type. The preserves recipe I followed was from the food blog, A Good Appetite, and the instructions were very clear and easy to follow. I mean seriously if I can do it, anyone can!
I also followed canning instructions provided in a new ebook I’ve had the pleasure of reviewing from Laura over at Heavenly Homemakers. It’s called Heavenly Homemaker’s Guide to Gardening and Preserving and it’s terrific with great pictures and step by step instructions. Very inspiring indeed!

Okay so I don’t want this post to get too long so I just quickly want to tell you about the Spinach and Mushroom-Stuffed Manicotti being a big hit last week and about the delicious cookies I made today. I went to make my family’s usual cookie recipe and discovered the only chocolate chips in the house were mint ones. So, to be wild and crazy, I decided to make up a batch of these Mint Chocolate Chip Cookies instead and they were just excellent.
Okay on our menu this week:
Monday: Homemade Pizza
Tuesday: Barbecued Pork Chops served with baked potatoes and veggies
Wednesday: My birthday! Hopefully someone else is cooking because I’m not :)
Thursday: Leftover buffet
Friday: Slow Cooker Honey Mustard Lime Chicken served with rice and broccoli
Saturday: Crockpot Ravioli served with homemade bread

Menu Plan Monday ~ June 15th

Whew, the end of the school year is almost near for us. June is killing me, between end of year activities and birthdays I’m definitely feeling the strain. For someone who loves to organize as much as I do I’ve come to the realization that what I don’t enjoy is organizing events. Nope, I’d much rather let someone else take the reins and just boss me around :)
Thank goodness in the mist of all this, I don’t have to worry about what I’m cooking each night. It’s times like these I’m especially grateful for menu planning and how it alleviates a whole area of stress for me. And even though my menu plan didn’t go according to plan once again last week, it all worked itself out in the end. For instance, I moved the Crockpot Italian Meatballs to Tuesday night and was so surprised by the amount of sauce it made I was able to use it for a spaghetti dinner the following night. Only one recipe didn’t get made but I’m just going to carried it forward to this week. Doesn’t get much easier than that!
Okay rhubarb fans, I have an abundance (that might be the understatement of the year) in my house right now from the rhubarb fairies, otherwise known as the in-laws. I’ve already made another Strawberry Rhubarb Pie (which was sooo yummy!) but I’m looking for some other ideas. If you’ve got any recipes you’d like to share please please do so!! Some of you asked last time what rhubarb is and while I don’t know how to explain it, this is what the edible stalks look like after they’ve been broken off from the big leafy plants they belong to.

Menu Plan Monday ~ June 8th

Hello everyone! Welcome to a new week :)
So I pretty much goofed on last week’s menu. That will teach me for not consulting with the weather network before planning my menu won’t it. It turned out to be a really hot week for us here which in all fairness rarely happens so I wasn’t expecting it. Needless to say I didn’t really feel like turning my oven on at all so I had to play the menu shuffle game a little bit to re-adjust or adapt things for the stove top or grill. It all worked out in the end though but you’ll notice this week that I’ve gotten much smarter and am including many lighter dishes that are quicker to make and don’t require me to heat up the house during our big heat wave…ha ha…it’s still probably considered cold to what many of you are experiencing :)
One of the meals I did still make was the Cheesy Chicken Vermicelli. Super easy to whip together and my hubbie gave it a 9 out of 10 which is a pretty good rating coming from him.
Also my cookie of the week last week was courtesy of Toni (from her most excellent blog The Happy Housewife) and they were yummy yummy! Check out her recipe for Chocolate Chip Whole Wheat Oatmeal Cookies!

Monday: 5-Minute Southwest Layered Salad served with baguette (one of my favorite salad recipes!)
Tuesday: Cold Chicken Satay Noodles (I’ll cook a whole chicken in the slow cooker to use)
Wednesday: Crockpot Italian Meatballs for sub sandwiches
Thursday: Leftover buffet
Friday: Thai Pork with Savoy Cabbage
Saturday: Zesty Corn Quesadillas served with Mandarin Spinach Salad
Simple Supper Sunday (which is a really nice way of saying fend for yourself :) )

Menu Plan Monday ~ June 1st + giveaway!

I always get a kick out of it when Menu Plan Monday falls on the first day of a new month. Something so organized about that :)
I love finding new programs/software out there that might help make menu planning just a little bit easier for my readers. Today I’m reviewing The Dinner Solution software over on my review site and as well I’m giving away a copy to one of you over there. Be sure to check it out!
Last week I surprised myself by baking a pie from scratch. If you are looking for a super easy and delicious dessert I highly recommend this recipe for Strawberry/Rhubarb Pie. Yummy!!
The other recipe that was a hit last week was the Slow Cooker Teriyaki Ribs. I’m not a huge fan of pork myself but my hubbie couldn’t stop raving about them. I definitely appreciated how easy this recipe was to prepare though.
So here’s what we’ll be eating this week:
Monday: Fajitas
Tuesday: Cheesy Chicken Vermicelli (I’ll roast a whole chicken in the slow cooker during the day to use for this recipe)
Wednesday: Ranch Pork Chops served with perogies and corn on the cob
Thursday: Fuss Free Ravioli and Cheese Bake with added sausage and served with caesar salad
Friday: Leftover buffet
Saturday: Quick Homemade Pizza
