Menu Plan Monday ~ March 31th

We had an amazingly beautiful weekend here in my small neck of the woods. The snow is melting fast and I’m happy to report that we only have about 4 feet left on my front lawn. Woohoo!

I got my new Kraft Canada What’s Cooking magazine in the mail on Friday and I’m excited to try out some new recipes from it. They look delicious. This is a free magazine that is delivered to my door each quarter that often has some great recipes in it. I believe there is also an American version you can sign up for called Food &Family. I don’t always think they are the healthiest of recipes but I just substitute in the healthier versions of some of the ingredients and it works out just fine. Does anyone else get this magazine?

I’m going to be doing a GREAT giveaway later on this week (Wed) so be sure to check back for that!

Here is what we are eating in our house this week:

Monday: Creamy Spinach Ravioli

Hi everyone! I hope you all had a nice Easter. Did anyone else find it impossible to come up with a menu when fully stuffed from a delicious dinner? My word I feel like I never want to look at food again, well until tomorrow anyway LOL. Dinner was so good, but the best part of all was the dessert, Strawberry Banana Trifle. Oh my!

What was your favorite Easter dish?

Last week on our menu was the Ultimate Grilled Cheese recipe. I loved it and was all over the Miracle Whip gooeyness of it but my husband, not so much. If anyone else tries it out I’d love to know what you think of it.

So on the menu this week:

Monday: Homemade pizza with friends

Tuesday: Cheddar Ham Soup (using up leftover ham)

Wednesday: Marinated BBQ Chicken served with spinach salad

Thursday: Slow-Cooked Spaghetti Sauce

Friday: Black Bean Quesadillas

Saturday: Leftover Buffet

Welcome to another week! We had a couple of beautiful sunny days here but unfortunately now we are back to snow. So sad, I’m so anxious for spring. This has been a very long winter.

Some of you may still be hesitating to give menu planning a try because you are having trouble finding the time or energy. Periodically I like to tell you about resources I come across that do the work for you. About a year ago I mentioned a site called Menu In A Box. Well since then Ruth has upgraded her product into an ebook format and right now it is on sale for $17.50 US. Her menu in a box includes 20 weeks of dinners, 20 shopping lists and over 100 fast and fresh recipes. I previewed her product and it is well organized and the recipes look to be really healthy. You can check it out by clicking the banner below.

Last week I forgot to tell you about how much I loved the Angel Hair Pasta with Garden Vegetables recipe I made the week before. It was absolutely delicious! I made it with whole wheat pasta instead and added some sausage for my meat lovin husband. We really enjoyed it, very refreshing!
