Menu Plan Monday ~ July 19th

How did your week go?  Are you finding it harder or easier to menu plan in the summer?  Are you pulling out the crockpot to avoid heating up the kitchen?  How about enjoying yummy summer salads?  I love a good potato or pasta salad, something you just can’t beat on a hot day that is for sure.  For some summer recipes you might be interested in this free pdf from Econobusters called Molly Green FRESH.

I hosted a packing party the other night (such a great way to attack the task at hand) and made up the Bacon Cheese Dip in a Bread Bowl for my guests.  Unfortunately I ended up having to throw the whole thing out because it was sooo salty from all the bacon.  Toni suggests using bacon bits instead so I’ll definitely give that a try next time.  I’m getting down to bare bones in my fridge and freezer so it will be interesting to see how this week plays out for me.

Menu Plan Monday ~ July 12th

Hey ladies, how are you doing this fine Monday?  Last week I had a good time chatting with Mandi over at Organizing Your Way about the benefits of menu planning and just wanted to pass along the podcast link for you to listen to if you want.  It’s not long although trust me I could have gone on for forever.  I love this subject.  Menu planning has changed my life, seriously.  No matter what time of the year or where I’m living, with my family or without (like now), I’ll be menu planning.  I can’t afford not to…time wise, sanity wise or money wise.  I love menu planning!

So this past week I did pretty good sticking with my meal plan.  I was a little disappointed with my chicken, not because of the recipe, but because I overcooked it in the slow cooker.  Overcooked meat in the slow cooker is horrible.  I cooked it for three hours on high and probably two on high would have been sufficient.

I did add to my menu a delicious salad recipe for an impromptu potluck we had on Friday night.  It’s called Tortellini-Shrimp Caesar Salad and I am highly recommending it.  So good and easy to throw together too!

Menu Plan Monday ~ July 5th

Hello to another week.  Anyone else feel like they are flying by?  My goodness so much happens around here in a week these days that I barely have time to catch my breath it seems.  My kids have gone to Ontario to visit their grandparents for a month so I can finish up writing my book and packing up the house.  I have until the end of the month to get it all done but I’m struggling with focus.  We did manage to find a house in Alberta but are still waiting for ours to sell here.  Such a relief to know that I won’t be homeless when I move, yay!

Needless to say I’m planning my menu for one and it’s hit or miss whether or not I’ll even stick to it.   I mean I’d be happy to just have popcorn for dinner but I do need to clean out my freezer so I’m going to incorporate some of that into my plan and see how it goes.

I had a wonderful birthday last week.  Thank you so much for all your awesome birthday wishes, it meant a lot to me.  I actually had two parties and the lovely cake seen above was made for me by this terrific lady for one of the parties.  Isn’t it pretty?  It was absolutely heavenly too, oh my!!  You are in luck because I just saw on her blog that she posted the recipe link for both the cake and the frosting so be sure to check it out.  The cake followed an amazing meal of BBQ chicken drenched in a secret sauce that was also to die for.  My girlfriend and her hubbie won’t give up the recipe but I’m working on it!!

Menu Plan Monday ~ June 14th

Hi everyone!  I’m back from my little trip although with no news unfortunately.  We didn’t find a home there and haven’t sold our house here.  I can’t wait until the day (hopefully soon!) I get to share some good news with you for a change but I have to remember it’s in God’s timing not mine.

So today I’d like to share a little goody for my Canadian readers (please say hi & let me know where you’re from).  Erin from $5 Dinners put together a great resource of Canadian coupon sites.  Some of them I use myself and others were new for me.  Be sure to check it out and save big…Canadian Coupons and Deals.

Okay let’s see what else….oh yes my recipe highlight this week goes to the Twice Baked Potato Casserole and while I didn’t get to make it myself (house showings required us to simplify) my girlfriend did prepare it and couldn’t stop raving about it.  She said it was delicious and super easy to throw together.  Did anyone else try it?

Oh and before I get to my menu today, many of you will have noticed that I go to a potluck every week at the church I attend.  I absolutely adore potlucks, a true potluck that is where the dishes aren’t planned in advance you just show up with whatever.  Believe it or not we rarely have double dishes.  I love the variety of food, so delicious!  Anyway I found this great post called the Potluck Survival Guide with some helpful information about potluck preparation.  Hope it helps!  How do you feel about potlucks?  Love them or hate them?
