Menu Plan Monday ~ Nov 23rd

Thanksgiving

Hello everyone!  I’m sure those of you in the US celebrating Thanksgiving this week are busy getting ready for the festivities.  We celebrated last month here in Canada.  I always try to prepare almost the entire meal in advance so when the big day arrives I can relax and enjoy my guests.  My favorite make-ahead Thanksgiving recipes include:

Make-Ahead Mashed Potatoes

Slow-Cooked Sausage Dressing

Black Forest Cheesecake (I make ahead and freeze)

The only thing I’ve never tried to make ahead is the turkey but after reading this post of Amy’s, over at The Finer Things in Life, I think I’m definitely going to give it a try one of these fine holidays.

Here are a few other note worthy links this week related to food and Thanksgiving that you might like:

Have a great one!  I’m thankful to all of you for coming by week after week to join me here as we bless our families and our budgets with our menu plans.

I’m also thankful for my youngest son with is four years old today (Sunday).   I just can’t imagine life without him in it.  The birthday supper he asked for was hot dogs and potato chips so that’s what we had :)

MPM ~ Nov 16th + Thanksgiving Table Decor

Thanksgiving

Hello everyone!  I’ve got a fabulous new banner to bring in this Thanksgiving holiday season with for those living in the US.  As you know here in Canada we celebrated Thanksgiving last month but I wanted to honor all my friends on the other side of the border.  How this banner came to be has such a great story of giving behind it that I just have to share it with you.  A couple of weeks ago I was cruising around blogland and stumbled across a lovely blog called Good, True and Beautiful and this post titled 30 Days of Giving.  I discovered that Sharon is participating in Keeping the Kingdom First’s 30 Day Giving Challenge by giving away 30 blog buttons.  I quickly left a comment and waited to see if I had made the list and was thrilled when I did.  The result is the beautiful button above.   I absolutely love it and a big thanks goes out to Sharon for donating of her time so generously to bless others like that.

So now on to last week’s recipe highlight.  I just can’t recommend the Bake Chicken and Acorn Squash enough.  It has been a Family Favorite for awhile now and it is SO good!  I used all chicken thighs for mine.

The best part of any holiday meal for me is decorating the table.  I really enjoy doing it and I love that it totally distracts from the meal (in my case that can often be a good thing :) )  I get most of my supplies from the dollar store and just get creative with it.  My Thanksgiving napkin rings this year were simply cardboard leaves (from the dollar store) hole punched with a pipe cleaner put through to secure around the napkin.  So easy but boy did they pop on the table.

Menu Plan Monday ~ Nov 9th

Hi everyone!   Hope you are all doing well and ready to get menu planning for an organized week!

So my recipe highlight of last week definitely goes to the slow cooked Rotisserie-Style Chicken.  This recipe was so easy to prepare in the slow cooker and my hubbie gave it a 9 out of 10 for taste!  I say wow to that because he’s a tough critic.    The Makeover Creamy Italian Sausage Pasta recipe was also very good and easy to prepare.  I’ll definitely be adding both recipes to our Family Favorite Recipe Index.

Unfortunately I wasn’t a huge fan of the Oven Chicken Fingers though, they just weren’t crispy enough for me.  I’m going to keep experimenting with recipes on this one.

On my baking list this week is Kristi’s Famous Banana Chocolate Chip Muffins.  How about you?  Baking anything special this week?  Feel free to share your recipe link in the comments.

So here is what’s on our dinner menu:

Monday: Chicken Tortellini Soup (using homemade broth from last week’s chicken)

Tuesday: Slow Cooker French Dip (new)

Wednesday: Baked Chicken and Acorn Squash (family favorite)

Thursday: Leftover buffet

Friday: Baked Ziti with Spinach and Sausage (new)

Saturday: I’m hosting a ladies fondue party! (will post pictures next week)

Hey gang, how is everyone?  I’m so glad you’re here, thanks for joining me and sharing your menu with everyone.

We just got home from a beautiful sunny weekend of camping which of course is the only way I’ll go because this princess girl doesn’t like to sleep in a soggy tent if it’s raining out.   Ahh the joys of tenting!  :)  Nothing beats hot dogs cooked over an open fire though.  Mmmmm.

So I don’t know if you remember but last week I pleaded asked for suggestions on casserole dishes that I could prepare for a friend.  Be sure to visit the comments on this post for so many great recipe ideas.  Thank you for helping me out.  The recipe I decided to use is called Chicken Macaroni Bake and it came from the fabulous site Once a Month Mom.  Gosh if you are looking for a great selection of freezer meal recipes be sure to check them out.  I doubled the recipe to make two nice size round take out dishes full which they could decide to have one or both at a time depending on how many people they were feeding on a particular night.

Okay so most of you must know by now how passionate I am about menu planning and how I’m on a mission to really encourage everyone to give it a try at least once.  I say at least once because I’m convinced it will only take that long for you to realize the many benefits to it.   Anytime someone wants to talk to me about menu planning I jump at the opportunity.  This week I did a podcast with the lovely Cara from The Household Helper blog.  We had such fun chatting away about menu planning.  If you’d like to have a listen you can do so here.

Last week’s recipe highlight definitely goes to the Enchilada Casserole.  Oh wow was this ever delicious and definitely a new family favorite for sure due to how simple and easy it was to make!

Here’s what’s on our menu for this week:

Monday: Mexican-Style Ravioli (missed from last week)

Tuesday: Grilled sausages served with Hawaiian Salad

Wednesday: Slow Cooker Maui Chicken (I might be missing my girlfriend from Hawaii what do you think? lol)

Thursday: Leftover buffet

Friday: Teriyaki Sirloin Steak served with baked potatoes and grilled veggies

Saturday: Grilled Portobello and Sun-Dried Tomato Sandwich with Garlic Herb Mayonnaise

Welcome to another week!  Have you heard the exciting news yet?  The famous Pioneer Woman has started a new recipe/community site called Tasty Kitchen!  I’ve been hanging out there for the past couple of days drooling over all the delicious recipes and trying to decide which ones I wanted to add to my menu plan.  So great, be sure to check it out!

This week I’d like to make a freezer meal for a friend that is just getting out of the hospital and would love your help figuring out what to make.  I have a number of recipes that are your standard spaghetti sauce/mozza cheese pasta type dish but I’d prefer to do something a little different.  Do you have a favorite go to freezer meal recipe that you make for a family in need?   Please share the link in the comments if you can.  Thanks!

Our recipe highlight of last week was the Tortellini Marinara recipe.  Such a quick and simple meal to throw together and it was yummy.  Next time I’d probably throw in some peppers as well just to add some veggies.   Did you have a favorite recipe from last week?

Here’s what we’ll be eating this coming week:

Monday: Enchilada Casserole

Tuesday: Heather’s Chicken Bruschetta Pasta

Wednesday: Teriyaki Tenderloin served with perogies and broccoli

Thursday: Leftover buffet

Friday: Mexican-Style Ravioli

Saturday: Company’s coming over ~  Steak and Vegetable Kabobs served with Sundried Tomato Pasta Salad and Ooey Gooey Peanut Butter Fudge Brownies for dessert (the last two are new recipes for me)
