<p>It&#8217;s been awhile since I participated in <a href="http://familycorner.blogspot.com/" target="_blank">Slow Cooking Thursday</a> but I haven&#8217;t been using my crockpot as much these days.  Not sure why.  I was going through my cookbooks tonight and found this recipe below that I&#8217;ve made in the past and we all enjoyed.  I like to make notations at the top of all the recipes I try and this one has &#8220;Great!&#8221; marked on the top.   The best part of this recipe is that it&#8217;s a one pot meal.  You&#8217;ve got your meat, potatoes and carrots all cooking up at once.  Nothing to do at dinner except dish up.  I love that!  I hope you enjoy it too!</p>
<h3><font color="#339966">Easy Meatloaf</font></h3>
<p>1 egg<br />
1/4 cup milk<br />
2 slices day-old bread, cubed<br />
1/4 cup finely chopped onion<br />
2 tablespoons finely chopped green pepper<br />
1 teaspoon salt<br />
1/4 teaspoon pepper<br />
1 1/2 pounds lean ground beef<br />
1/4 cup ketchup<br />
8 medium carrots, cut into 1-inch chunks (I just use baby carrots)<br />
8 small red potatoes</p>
<p>In a bowl, beat egg and milk.  Stir in the bread cubes, onion, green pepper, salt and pepper.  Add beef and mix well.  Shape into a round loaf.</p>
<p>Place in a 5-qt slow cooker.  Spread ketchup on top of loaf.  Arrange carrots around loaf.  Peel a strip around the center of each potato; place potatoes over carrots.</p>
<p>Cover and cook on high for 1 hour.  Reduce heat to low; cover and cook 7-8 hours longer or until no pink remains in the meat and the vegetables are tender.</p>
<p>Yield:  4 servings</p>

<p>I made this dish on Tuesday and it was so delicious and smelled great cooking away all afternoon.  I definitely recommend it!</p>
<h3><font color="#00ff00">Lemon Chicken &amp; Potatoes</font></h3>
<p>2 cubes or packets low-sodium bouillon<br />
1 whole chicken (3-4 lb), fat-trimmed, rinsed and dried, giblets discarded<br />
1 lemon, halved<br />
1/4 tsp paprika<br />
3 Tbsp finely chopped flat-leaf parsley<br />
1 large onion, cut into wedges<br />
2 cloves garlic, minced<br />
2 Tbsp light soy sauce<br />
8 small Yukon Gold or baby potatoes, scrubbed<br />
6 oz fresh mushrooms, sliced 1/2&#8243; thick</p>
<p>1.  Put one bouillon cube (or contents of packet) inside chicken.  Squeeze lemon, reserving juice, and put rinds inside chicken.</p>
<p>2.  Place chicken in cooker breast side up.  Sprinkle with paprika and parsley.  Add onion and garlic, then pour soy sauce and reserved lemon juice over chicken.  Crumble remaining bouillon cube (or sprinkle packet) over chicken.  Line sides of cooker with potatoes and mushrooms.</p>
<p>3.  Cover.  Cook on high 3.5 to 4 hours or until an instant-read thermometer inserted into thickest part of thigh reaches 180 degrees F.</p>
<p>4.  Discard lemon rinds.  Divide potatoes, mushrooms, onions, and chicken pieces among 6 bowls, discarding skin and bones.</p>
<p>Serves:  4</p>

<h2><font color="#008000">Polynesian Roast Beef</font></h2>
<p>1 boneless beef top round roast (3 1/4 pounds)</p>
<p>2 tablespoons browning sauce, optional</p>
<p>1/4 cup all-purpose flour</p>
<p>1 tsp salt</p>
<p>1/4 teaspoon pepper</p>
<p>1 medium onion, sliced</p>
<p>1 can (8 oz) unsweetened sliced pineapple</p>
<p>1/4 cup packed brown sugar</p>
<p>2 tablespoons cornstarch</p>
<p>1/4 tsp ground ginger</p>
<p>1/2 cup beef broth</p>
<p>1/4 cup soy sauce</p>
<p>1/2 tsp minced garlic</p>
<p>1 medium green pepper, sliced (yuck, I sub with red pepper)</p>
<p>Cut roast in half; brush with browning sauce if desired.  Combine the flour, salt and pepper; rub over meat.  Place onion in a 3 qt slow cooker; top with roast.</p>
<p>Drain pineapple, reserving juice; refrigerate the pineapple.  In a small bowl, combine the brown sugar, cornstarch and ginger; whisk in the broth, soy sauce, garlic and reserved pineapple juice until smooth.  Pour over meat.  Cover and cook on low for 7-8 hours.</p>
<p>Add pineapple and green pepper.  Cook 1 hour longer or until meat and green pepper are tender.  Yield:  10-11 servings.</p>

</span><br />
1 pound turkey Italian sausage links, casings removed <span style="color: #cc0000; font-size: 78%">(did this the night before to save time in the am)</span><br />
4 cups water<br />
1 jar (26 oz) meatless spaghetti sauce<br />
1 can (16 oz) kidney beans, rinsed and drained<br />
1 medium yellow summer squash, halved lengthwise and cut into 1-inch pieces <span style="font-size: 78%"><span style="color: #cc0000">(I asked hubby really really nicely and he did this for me the night before)</span></span><br />
2 medium carrots, cut into 1/4 inch slices <span style="color: #cc0000; font-size: 78%">(I used baby carrots and didn&#8217;t bother to cut them up)</span><br />
1 medium sweet red pepper, diced<br />
1/3 cup chopped onion <span style="font-size: 78%"><span style="color: #cc0000">(I just cut into big chunks and then picked them out later)</span></span><br />
1 1/2 cups uncooked spiral pasta<br />
1 cup frozen peas <span style="font-size: 78%"><span style="color: #cc0000">(didn&#8217;t have any so just skipped but it sure would have looked even prettier with them)</span></span><br />
1 tsp sugar<br />
1/2 tsp salt<br />
1/4 tsp pepper</p>
<p>In a nonstick skillet, cook sausage over medium heat until no longer pink; drain and place in a 5 quart slow cooker.  Add water, spaghetti sauce, beans, summer squash, carrots, red pepper and onion; mix well.  Cover and cook on low for 7-9 hours or until vegetables are tender.<br />
Stir in the pasta, peas, sugar, salt and pepper; mix well.  Cover and cook on high for 15-20 minutes or until pasta is tender.</p>
<p><span style="font-size: 85%">Yield:  8 servings<br />

<p><span style="font-size: 130%; color: #33cc00">Slow-Cooked Pork Loin</span></p>
<p>1 boneless whole pork loin roast (3.5 to 4 lbs)</p>
<p>1 tbsp canola oil</p>
<p>1 medium onion, chopped</p>
<p>1 celery rib, cut into 1-inch pieces</p>
<p>1 envelope brown gravy mix</p>
<p>1 cup water</p>
<p>1 cup unsweetened apple juice</p>
<p>1/2 cup unsweetened applesauce</p>
<p>2 tsps Worcestershire sauce</p>
<p>1/2 tsp seasoned salt</p>
<p>1/2 tsp pepper</p>
<p>Cut roast in half. In a large skillet, brown roast in oil on all sides. Transfer to a 5-qt slow cooker. In the same skillet, saute onion and celery until tender; add to slow cooker.</p>
<p>In a small bowl, combine gravy mix and water. Stir in the remaining ingredients; pour over pork. Cover and cook on low for 5-6 hours or until a meat thermometer reads 160 degrees and meat is tender. Skim fat from cooking juices; serve with roast.</p>
<p><span style="color: #33cc00">My notes:</span> okay so I&#8217;m way to lazy to brown my meat beforehand so I skipped this step and it still turned out nicely and no one was the wiser&#8230;shhhh it will be our secret.</p>

<p>4 bone-in pork loin chops (3/4 inch thick and 8 oz each)</p>
<p>In a small bowl, combine the pineapple, barbeque sauce, onion and chili sauce. Pour half into a greased 3-qt. slow cooker. Top with pork chops and remaining sauce. Cover and cook on low for 4 1/4 to 5 1/4 hours or until meat is tender.</p>
<p>Yield: 4 servings</p>

As freaked out as I was at the thought of 40 cloves of garlic, <a href="http://susannesspace.blogspot.com/2007/04/slow-cook-thursday40-clove-chicken.html">THIS</a> recipe is absolutely delicious. WOW!! You have got to try it. Strangely enough it doesn&#8217;t taste garlicky at all. In fact the garlic becomes sweet and so tender that I was even eating it straight up, it was that good! The smell in the house as it was cooking all day was amazing too.</p>

So today I&#8217;m sharing the recipe for Sirloin Roast with gravy. Delicious and very quick to assemble first thing in the morning!</p>
<p><span style="font-size: 130%; color: #33cc00">Sirloin Roast with Gravy</span></p>
<p>1 boneless beef sirloin tip roast (about 3 lbs)<br />
1 to 2 tablespoons coarsely ground pepper<br />
1 1/2 teaspoons minced garlic<br />
1/4 cup reduced sodium soy sauce<br />
3 tablespoons balsamic vinegar<br />
1 tablespoon Worcestershire sauce<br />
2 teaspoons ground mustard<br />
2 tablespoons cornstarch<br />
1/4 cup cold water</p>
<p>Rub roast with pepper and garlic, cut roast in half and place in a 3-qt slow cooker. Combine the soy sauce, vinegar, Worcestershire sauce and mustard; pour over beef. Cover and cook on low for 5 1/2 to 6 hours or until the meat is tender.</p>
<p>Remove roast and keep warm. Strain cooking juices into a small saucepan; skim fat. Combine cornstarch and water until smooth; gradually stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef.</p>

<p>1 can (14.5 oz) chicken broth</p>
<p>1 cup unsweetened apple juice</p>
<p>1/2 cup Dijon mustard</p>
<p>6 tbsp cornstarch</p>
<p>6 tbsp water</p>
<p>Cut roast in half; place in a 5 qt slow cooker.  Combine the broth, apple juice and mustard; pour over roast.  Cover and cook on low for 4 to 4.5 hours or until a meat thermometer reads 160 degrees.</p>
<p>Remove roast and keep warm.  For gravy, strain cooking juices and skim fat.  Pour juices into a saucepan.  Combine cornstarch and water until smooth; gradually stir into juices.  Bring to a boil; cook and stir for 2 minutes or until thickened.  Serve with pork.</p>
<p>Yield: 8 servings</p>
