Hi friends! I hope you are feeling better than I am today. Not feeling so great and laid in bed all day. I was hoping to catch up on all my PVR’d cheesy Hallmark Christmas movies and then my PVR decided not to work today. So sad, I love a good Hallmark movie, don’t you? I also love some good comfort food and luckily I had potatoes in the house to make some yummy french fries that hit the spot. I’m so glad that I can still have potatoes even though they aren’t technically Paleo. Thankfully they don’t bother my joints although I do try to not over do it. Add a little hot sauce and I am a very happy girl 🙂
I don’t know how many of you reading this are all ready menu planners or how many of you want to be. But for those that aren’t, if there is anything else I can do to help you give it a try please let me know. Sometimes I think I’m talking to myself here but I really do want to help because I honestly believe menu planning can be life changing. It certainly was for me. My Weekly Menu Plan:
Monday: Easy Baked Honey Garlic Chicken served with cauliflower rice
Tuesday: Meat and Veggie Paleo Chili (I love this recipe, I make it earlier in the day when I have more energy and throw it into the slow cooker)
Wednesday: Easy Butternut Squash Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me BLT Lettuce Wraps
Saturday: Slow Cooker Beef Stew
Sunday: YOYO (you’re on your own!)

I’m also a meal planner, and I peruse various blogs and Pinterest boards to get recipe ideas, but I keep finding myself coming back to yours, because there’s always a new keto idea that sounds delicious! Hi Laura I enjoy looking at all your posts. I keep trying to meal plan but don’t seem to get it done. I am doing physical therapy 4 days a week so planning would be a benefit. I do make larger than needed amounts of meals, soups, roast dinners, chili etc. I nee to clean out my freezer that is on a unheated porch so need a better weather day. I am in MI. It is just my husband and I and we are trying to watch cholesterol for him and somewhat heart healthy. We both like to eat. I find that we are eating out a lot with this therapy but pray that when it is done meal planning is must. I want to get organized now. Hope you are feeling better. Freezer meals will be a big thing for us. I have bad arthritis and not always up to cooking long hours. Hope you can give me some inspiration.
