Hello, happy “keep me sane” menu plan day! Menu planning will not only keep you sane but save you all sorts of $$, keep healthy eating in check and make it easy for your kids to help in the kitchen. Yes please! Seriously don’t wait, do it today!
Yesterday was a bit of a hard day for me as it was the first time I didn’t get to celebrate my son’s birthday with him. Now if you know me at all you know I absolutely adore birthdays and making a big deal out of them. My son is away at college for this birthday so instead of celebrating with him in person I sent him a really big care package full of all sorts of birthday treats and got to talk to him on the phone yesterday for a whole hour. That was pretty cool since phone calls are few and far between from that boy, sigh. I absolutely love sending care packages to both my older kids who are away at school. In fact I sent my daughter a care package every month for two years. It just brings me so much joy to send them a box of surprises to make them smile. Anyone else do this regularly?

Monday: Beefy Cheesy Tortellini Bake
Tuesday: Healthy Slow Cooker Chicken Potato Soup
Wednesday: Blackened Chicken and Avocado Salad
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pecan Crusted Salmon
Saturday: Baked Parmesan Crusted Pork Chops served with broccoli
Sunday: YOYO (you’re on your own!) – we’ll have our Canadian Thanksgiving dinner on Monday

I got on the bandwagon with food this week. Crockpot chicken stroganoff with rice not noodles this time for time sake tonight, yoyo Tuesday, Greek chicken bake Wed, subway sandwiches as we’re going to bible study after work, Hawaiian meatloaf on Friday.
I’m figuring out menu for our 40th anniversary celebration 2 Sat away. Now how much are people going to eat that afternoon? One lady is making cupcakes. I’m making 2 batches of scones and breads made by a bakery. Mmmmm! I didn’t know you had 2 children in college! Wow! I’m sure they enjoy your care pkgs. My mom sent me pkgs when I was in the Air Force and I enjoyed the treats she made. Have a good week!
